Great explanation. I’m going build the same thing. One question how’s your lates heating element from Cabelas? I’ll be doing 100LB batches of sausage and want to make sure heating element is sized correctly.
I'm not sure what they have available anymore, but I'd say the highest wattage you can get at 110. I think ultimately you should go 220 and use an oven element so it dosent have to work as hard, but that wasn't an option for me. I didn't have access to a 220 line in that location.
Hey Keith, if memory serves just Home Depot. They're for attaching romex, cable, etc.. Just make sure to get the metal ones and not the plastic! Lol. And I just used self tapping screws with them.
Just the door, because the inside was plastic. That's why these old fridges make great smokers.... Already insulated. I removed all plastic on the inside of the door and put in new insulation, then put up new sheet metal. It's still going strong today!

Where did you get the clips to hold on the gasket around the door?
