Tip for keeping your blood sugar from spiking after eating potatoes I learned from a dietitian: cook your potatoes a day ahead, and store them in the fridge overnight. Refrigeration changes the starch molecules to be more resistant and slow absorbing. This effect will not be reversed by reheating the potatoes, so for this recipe you could smash them the night before, then the next day continue the rest of the recipe since the frying pan and braising process should sufficiently reheat the potato (if not just microwave them !briefly! before adding to the pan). This is one of my favorite side dishes that I first tried at K-BBQ a few years ago and I make it all the time. Also: Thank you for mentioning Yondu, I get it in a large bottle on Amazon. It’s SO GOOD!! I originally bought it to use instead of fish sauce in recipes and it’s so versatile. I hope it’s never discontinued

Helen, have you tried this recipe with either baked or microwave baked fingerling potatoes? With less water in the skin and the potato flesh, a dry cooked potato will absorb more of the sauce when pan cooked and be more flavorful. I also do this with a recipe my mother called Brown Smashed Potatoes, which simply finished the flattened potatoes in a butter, shallot and garlic saute and dry cooked potatoes beat the wet cooked hands down.
@@Bear-cm1vl Hi 👋 You certainly can give that a try. Because the sauce is quickly braised on high heat for 20 seconds, I prefer the crushed/bruised potatoes cooked so the braised sauce coates the cooked potato quickly.

Brown sugar n Syrup is over sweet. Reason syrup itself has sugar content. Can't we just caramel the brown sugar into liquid n add in. Better control of sugar level for diabetes ppls.

Those are two different kinds of potatoes. They cook differently and have different textures. Reds are waxy and firm, Yellows are lovely creamy and soft.This will be a weird mouth feel imo.

For me, the red potato has a more creamy taste, and the yellow has a nutty taste. As for the texture, as long as they are boiled/cooked slightly firm, the texture difference is unnoticeable to me. But please do use the potato of your choice with this recipe.

Try in the oven. Mix salt n pepper, garlic, butter to do the Basic potato cracking. Then cook n sauté as the host instructions sauces.

As for rice and potato side dishes, it is a common combination in Korean meals. We also add potatoes with some of our delicious noodle dishes, too. Now, you can certainly make your own decisions on anti-diabetic food consumptions🙏

Those are two different kinds of potatoes. They cook differently and have different textures. Reds are waxy and firm, Yellows are lovely creamy and soft.This will be a weird mouth feel imo.

For me, the red potato has a more creamy taste, and the yellow has a nutty taste. As for the texture, as long as they are boiled/cooked slightly firm, the texture difference is unnoticeable to me. But please do use the potato of your choice with this recipe.
If you cook them the way she instructed the texture will be the same
