Rougaille with Red Kidney Beans and Mushrooms - Mauritian Creole dish (vegan/vegetarian recipe)

  • ✿ Veganlovlie Recipes / Rougaille - Vegan : The Mauritian rougaille is a much treasured dish in Mauritius. It is a Creole-style tomato-base sauce to which other vegetables, beans or legumes can be added. In this recipe, I have added red kidney beans and mushrooms to the base rougaille sauce. I also have a tofu and mushrooms version on my blog.

    As simple as this dish is to make, its uniqueness and complex flavours come from the combination of the fresh French herbs like thyme and parsley and Indian notes from the coriander and curry leaves. Added to that, a bold layer of heat from the chili, for as much as you can tolerate, used alongside the base components of a tomato sauce - onions, garlic and ginger. I have used curry leaves and coriander (cilantro) in this version but variations of this recipe would swap the coriander for parsley. You may omit the curry leaves if you don’t have them but they really do add another depth of flavour to this dish.

    Yummy!!! I don´t eat onions and garlic because they are not sattvic and not healthy in a holistic perspective, so I used kalonji seeds to replace onions and asafetida to replace garlic (have to fry it!). It was so delicious! Haven´t eaten a rougaille in 20 years, it was such a joy to taste it again!!! Thank you!

We like to show the cooking process from scratch, just so people can see that it is not that difficult; it can be something very enjoyable. How are you finding it as a vegan after one week btw?       Thank you! Im loving being a Vegan already! And iv had minimal resistance from my 13 yr old son. I made your Apple/Orange cake at the weekend for a treat and my other relatives couldnt tell it was Vegan, they all loved it. Iv had -only slight -difficulty in getting myself organised. Iv looked through yours and a couple others recipes and got a list of basic ingredients to help to go Vegan. I had to order from 2 diff websites as there is no Health Food shop in my town. Yesterday the 2 orders came and i spent the day re-organising my kitchen. I really enjoyed it. Im following Dr McDougalls plan so found it hard not using oil. But not missed the dairy. Enjoyed ur Oat milk recipe and making the SP Roti today! :) Got some Harrissa spice & paste in the order and other bits so can do more now :) I feel like ive a lot more energy after this week and i think my blood pressure has gone down. But have to wait til i go to the Doctors :)

I was thrilled because I haven't had it for years, I used to have it a lot when I was a kid. So, we are working on a recipe. We hope you'll like it.

    thakyou! I too absolutely love Mauritian food, as far as I am concerned, nothing compares, I wish there were restaurants around, I have to 'make do' with Indian, which is very nice but nothing like Mauritian food ;)

      +CarolNav Hi Carol, what did you mean by "this is not a recipe", I assumed you meant your question is not related to the recipe. Well, this dish is made with many different ingredients added to the base tomato sauce. It is not traditionally vegan, people make it with fish, chicken or eggs sometimes. Although we do have a plain vegan version that is made with just the tomatoes, onions, garlic and herbs. There is no specific time of the year or day to eat it. I sometimes even have the plain version as part of breakfast in a tortilla/roti with some other fillings too.
      It's eaten all year round and at any time of the day, breakfast, lunch or dinner. Some people use it as a bread filler depending on what they have added into the sauce. Sometimes it is used as a main dish, like I did here but sometimes it is used as a side dish too and serve with some other curries. I am infact working on a roti fillings series where I'll be using a rougaille sauce again. So, you'll see this being used differently. Thank you for the appreciation. I'm glad you like the channel.       I am not familiar with the Chilean food culture and I'd like to know more too. :) What are the typical kind of food/recipes you usually have?

      +Beachlovingaussie My personal favourites are ramen or noodle soups (not featured on the channel [as yet]), dal with rice and curries with roti. But it is really quite hard for me to pick a favourite recipe as I love food, from the ones I am used to, to discovering and trying new recipes, and from time to time, I'll fall in love in something else! :)
      As to what I recommend from the channel:
