LIFESTYLE ALTERATIONS FOR SENIORS: I love your recipes - especially the one-sheet dinners. BUT, most seniors have some kind of issue and mine is not being able to lift heavy weights with my right arm. So, I just went out and bought TWO much smaller cookie sheets, and divided the recipe onto two sheets which are easier to lift in and out of the oven. I hope this simple solution helps someone else. Thank you for your recipes.
Excellent idea! I bought a air fryer- so much easier to use ( although I’m not very good at it yet…😁)…

I’m the same as you, Kevin, I do as much prep as possible the day before, including setting the table and covering it with a shower cloth.
What a perfect, delicious recipe. We made this up at our cabin and it was so comforting and tasty. The perfect summer meal to enjoy in our forest surroundings. We paired it with a side of garlic red skinned mashed potatoes and enjoyed every savory bite.

Kevin, Your videos remind me of my days growing up in Westchester County, N.Y. over 50 years ago. People took so much pride in their gardens. We had an old pear tree that reached up to my bedroom window. Unfortunately the squirrels got to them before us. I can almost remember the beautiful sights & scents in the air during those summers. I tried this on the hubby and he was a super fan. I added some potatoes. Added a green side salad and it was delish. The meat was so moist, just a slight kick so we loved it.

I made the chicken & corn tray bake for dinner tonight…and it was DELICIOUS! Hubby loved both the chicken and the corn, and the cherry cobbler I baked for dessert. I decided to take your advice, and add chili powder to the corn and mmmmmmmm! Perfection! This recipe definitely fits our lifestyle and I’m adding it into my recipe book! Thanks for sharing it!

I love the versatility of this recipe, and I love the flavors of corn and jalapeño together. I'm going to bake half with chicken and half with cubed tofu for my mix of veg and non-veg family. I'll marinate the tofu in the same marinade as the chicken (separately) and can bake both the same time and temp. Also happy to be reminded of the simple zucchini soup recipe. I hope it was a successful dinner party. Thanks for showing us the cute cake!

In it Sergei Korolev, head of the Soviet space program defines what the choice of first cosmonaut must be. Ah, another great way to cook with mayo and I love corn. So this is a must try for me.
Btw, I made a similar zucchini soup last week, but I didn't use nuts - as I'm allergic -, but used some goat cheese.
(It's also great as a warm soup)
And it must be said, your home is amazing; Decor, household goods and furnishings; Lovely.

I’m not a huge fan of jalapeño…i don’t mind the heat, but I feel they just over power the dish … does anyone have any suggestions for a jalapeño replacement in this dish??? Any ideas are welcome…thanks for another outstanding video Kevin!!! 😊
Marinated roasted bell peppers or sundried tomatoes would work great.
