Instant Apple and Banana Bircher Muesli

  • Eating breakfast is one of the most important habits associated with weight control; those who skip breakfast are more likely to eat unhealthy snacks and be overweight. In children, eating breakfast is associated with improved academic performance.
Bircher muesli is a soaked muesli which is usually left overnight to soften, however you can make an instant version (like this one) if you use fine rolled oats. Oats have a low glycaemic index and are full of soluble fibre. Yoghurt and juice is often used as the liquid, but I like to use milk (especially almond milk) for a rich, creamy and decadent flavour. The mashed banana works as an excellent natural sweetener, and when it comes to the toppings, you can use whatever you like! Watch my video below on how to create this recipe at home.

Yum! I make mine with a mix of live bio yoghurt and milk. It feels like eating dessert for breakfast it's so tasty. Sometimes we even put raw cacao powder in too and leave it sit overnight. With the chia seeds, yoghurt, milk and cacao it's like a chocolate pudding in the morning. And sooo healthy. Who wouldn't want to eat guilt free pudding? Sign me in!

Nadia! I loooove all your recipes. Every fortnight Wednesdays (I try anyway) to incorporate one of your meals. They are so delicious and it makes me feel so much more healthy. Also, interesting fact. Did you know that almond isn't actually a nut? It's a seed/drupe. My son has allergies to nuts, but not almond. He loves almond milk too

Yep would be fine for around 3 days - you might just have to add some more milk to loosen it up when you do eat it :)

Hi! Muesli should be soaked at room temperature so that the good bacteria that support our gut flora can develop. The best muesli is made with whole-grains which are freshly ground and mixed with water immediately because otherwise they oxidize with air just like apples.
These home-made oats should be soaked only 30 min. otherwise they get a bit bitter. They must be soaked because they contain a substance which can't be digested well otherwise.
The oats bought at the supermarket lose a lot of their great properties within a month because they are processed and pasteurized so that their shelf-life is longer.
Other grains like wheat, barley, buckwheat etc. need being soaked from 5-12 hours.
Dried fruits and syrup contain a lot of sugar with might give some digestive problems to some people since it makes fresh fruits ferment.
I got a lot of useful information on this topic by reading books by the German doctor Max Bruker that also promoted the work of doctor Bircher Benner and his sons.
He was adamant in repeating the above mentioned rules because he had seen some patients having problems when they used dry and fresh fruits or fresh fruits and sugar together. Instead of milk, he used cream but I think almond milk is fine too.
Like doctor Bircher, he could cure many terminal patients. His books are simple and amazing.

I’m sure this tastes awesome. However it’s a heavy sugar/carb bomb. Fruits and carbs... Blood sugar will spike like crazy. Low GI Oats won’t help there. sorry, but it’s not as healthy as it looks.
