    We'd do that for hours. Damn I miss working for Connie's. I saw them make 1000 pizzas and put out in their delivery trunks in 56 minutes. I ti ed it. Connie's is a MACHINE !!!!!!!! Unstoppable. Everyone had their job and nothing else. Some of these guys would be making dough for 20+ years for Connie's. They were dough masters obviously.

      Yes we are. AND that's their job all day then the next it might be putting the dough in the pans..... ect...... workers there go from working there for 10, 15 up to 30 + years. The whole crew.

    I went to Connie’s in Chicago when I was in 4th grade. I’m now 42 years old and it’s still my favorite pizza ever. Definitely a core memory of my childhood!!!

    I haven’t had Connie’s pizza in over 30 years. It was one of the best pizza places in Chicago. Next time I’m there I will have it.

      We were lucky to be able to go there for this video shoot. And, to try those delicious pies. Truly a Chicago classic, often forgotten about because it's location on the south side, but the real ones know.

    I've only had Connies frozen pizzas, but the crust/dough they use tastes different and better than any of the dozens of pizza brands in the store.

      Yep I was a manager in training for a new store back in 2001 and I worked at Connie's mother store ( Archers ) for almost a year before going to my store.

      This video was taken for an order for a local business that ordered 250 pizzas, so they were made and delivered instantly. Connie's Pizza is a restaurant so they don't make pizzas ahead of time, only to order.

      I will say it again no exaggeration, I saw them from start to in the pizza trucks 1000 pies go out in 56 minutes. No bull....I timed it. The amazing thing is Shammel ( the kitchen manager at the time ) did not lose 1 pizza.

      @@curiously_TV yep you haven't seen when the taste of Chicago is on. We go crazy. We'll do 1500 pizzas a day there and 1000 at Wriggly Field and another 1000 at the Sox Stadium. Plus our regular business.

    Connies has the only middleweight thickness pizza that I have enjoyed. I generally like pizza either super thin or deep dish. Connies has good crust and quality toppings. Sadly the suburban locations have closed so Archer is the only choice. The frozen are not as good.

      The dough they use is the same they've used for 50 years. it does get puffy when cooked, but it's fairly light for a deep dish. The owner himself has referred to it more as a focaccia type texture.

      Actually you can buy it straight from Connie's. Call up Connie's and they will make you a fresh one put it in dry ice and shipped to you that day. Going to be a bit expensive being the pie weights 3 lbs .

    I thought Chicago pizza was cooked upside down, cheese in the bottom, crust on the top. Maybe thats just one particular technique.

      Connie's does have a version of a stuffed pizza where there is an extra layer of crust on top of the cheese, but the crust is always on the bottom first then topped with sauce, toppings, and then cheese.

      Probably less than 1% of orders at this restaurant are for the vegan pizzas. How are you so sure that they don't use different gloves or knives for vegan pizzas? People and businesses shouldn't change their entire operation so that they can accommodate a few loud, angry outliers like yourself. Call the restaurant yourself to find out their process for vegan pizzas instead of assuming from one video you watched.

      @Vegas Eddie What I think is that all the restaurants I have spent most of my life working in always had health departments requiring proper cleaning and sanitation, proper food handling and storage, proper handwashing, and they required gloves. I am ServSafe certified for over 20 years (look it up if you don't know what it is). I understand well how heating to 165°F kills bacteria. I also understand how there are foods in restaurants that are not cooked to 165 or not cooked at all. And I have seen things in kitchens way worse than foot lettuce (again, look that up if you don't know). Wearing gloves may not be necessary in this case, but it puts customers at ease when they don't see you washing your hands.

      If you have sausage or pepperoni on a pizza, you're putting meat in your mouth that's come off a dead animal that was slaughtered several days, if not weeks, before. And no, I'm not a vegetarian.
      When I worked in my dad's food processing business in Chicago, we washed our hands over thirty times a day, using the foot pedal sink installed in the same room. Don't worry, their hands are probably cleaner than a surgeon's.

    I worked at a pizza place & it was my favorite job ever! It closed down😢 I MAKE HOMEMADE PIZZA BETTER THAN THIS SLOPPY SHODDY JOB PLUS I use secret ingredients & stuff my crusts! I make 18" pizaas

    To all you tourists in these comments... Connie's has never been the best pizza in Chicago...not in the top 20...and deep dish pizza is tourist pizza. Not pizza locals eat on the regular. Our original Chicago style pizza is tavern style, thin, butter crust and cut into squares.

      ?? Connie's is not in the top because it's off the beaten path and in Bridgeport. If people want to eat tourist pizza then they can go to Lou's or Giordano's. Connie's is south side, old school started on 26th street and been there for 60 years.
