When i was young i worked in a market truck from a fishmonger and had a lot of filleting to do. We did check the fillets for worms on a box with lights in it and a glas screen on top (screenbox). The worms showed up as dark spots and easy to see in the transparent fillets. Easy to cut out or to disgard the infected piece of fish. Good and informative video.Thanks.
When I worked at the seafood market in my town(I worked there for 23 years) I had a regular customer who was a marine biologist and she would only buy the cod filets if she saw the worms in them. She said as the fish becomes old the worms will actually leave the meat and you'll see them crawling on the tray. I'm sorry but I use worms to catch fish I'm not eating them. She said after you cook them they are completely harmless . I'll take her word for it lol. Another great video

I've eaten plenty of cooked worms in fish. Especially red grouper from the Gulf Of Mexico. I remember seeing fine black lines in the meat that everyone said were worms. They made no difference. No problem.
A few years ago, I saw red worms coming out of the Codfish at Costco. The fish that they sell is normally really fresh. Costco no longer sells codfish now.
I got into a 30lb amberjack 20 years ago. My elbow was destroyed. They are brutal.
Meat was wormy and not worth saving.

Those Sea Donkeys are fun to catch and good to eat. I remember the first one a speared definitely took me for a ride.

@@MtnMichael88 I think AJs are under appreciated. They are really good on the grill with some ginger teriyaki marinade. Nice firm meat with very little fishy taste as long as you trim all the bloodline off.

In the 90's we deep jigged with home made lead bars with hooks. There is a 200' wreck off of Boynton beach that the amberjacks would stack up.
We were there in 2019, took the makers air flight too. Super awesome place. Thanks for reminding us to plan a trip back there!

So in the past I have marinated Amber Jack in buttermilk and Garlic salt overnight then grilled the steaks and they were phenomenal
I believe it, I've had them grilled before and it was great.

Here's a technique I learned from some NZ guys: Think of it like music. 8/4 pulls on the pole arm, and 2/4 on the spool, 1 half turn per count.

Admittedly I have critiqued you in some videos’ comment sections in the past, but I hope that can be forgiven. You seem like a cool and intelligent guy and I would enjoy hanging out with you, I’m sure, and would learn a lot as well.
I’ll take you freshwater fishing in Minnesota for stream trout in the bluff lands, walleye/pike/Muskie in the north land and whatever kind of hunting you can think of in the whole surrounding areas!

Lots of Japanese fishermen have been using slow pitch jigging rod setups for years it just finally started to catch on in America.

Those look beautiful! I really like a couple of days in a salt, brown sugar and raw apple cider brine. Can throw in some additional seasonings depending on which direction you’d like to take it. And thank you for the detailed explanation of the worms. Have been working to pick them out where possible and using the worst for bait.

I don't even like fish but that smoked fish at 36:40 made my mouth water.
When I lived in Costa Rica and went trolling a lot we would drop jigs while a fish was being fought and the motor was in neutral. We drug up some decent snapper like that, but those guys don't have any way to tell how deep it is or what's under them. It could be an underwater mountain peak or a valley between underwater mountains. So we had no idea how far to drop or anything. I had some lures I could cast or drop so they were good for tuna on the surface too.
I think you should add a little bit of bait or a Gulp trailer or rub Dr Juice or ProCure all over your jigs so they smell good to the fish. Their sense of smell is far stronger than a dog's so it's got to help. Also some smells repel fish, like sweat, sunscreen, bug repellent, gas/petroleum, and anything else that has a strong unnatural small. So it's good to cover up any negative scents. I never used them and lately I have been and they make a big difference in the Chesapeake Bay for sure. So even if nobody else does it I'd put a scent on those jigs, probably ProCure bloody tuna or herring but it probably doesn't matter as long as it smells like food to the fish.
That looks like fantastic smoked fish ! Nearly every type of fish I’ve cleaned ,,,at sometime , or place I’ve found parasites. Obviously try to avoid seasons , species and locations where infestation are severe , but if you’ve seen enough fish you will find them. Like you said in the video it’s something you work around. I tend to not draw it to the attention of guests, or anybody. I don’t know of this as a health issue . I eat sushi now, but I wouldn’t for years and people never knew why. I’ve succumbed to peer pressure and love sushi,,,I’ve been feeding them dewormed fish for years.
It blows my mind that Zack's family has been in key West for 8 (now 9!) generations! Any idea what year they got to the keys and where they came from? I'm super curious about the early homesteaders in the keys. Cool video as always!

I’m a Midwesterner and it’s funny when I show my beautiful fish to friends that ocean fish they say I use bigger fish for bait 😂
Up here in New Jersey where I am the only fish I ever really see that have worms are Cod. And usually once I filet the fish I put it in a plastic bag and stick it back on ice for a while. And the worms will tend to come to the surface of the filet and you can just pick them out.
I love vertical jigging I like to do 5-10 cranks off the bottom and drop back down for those bottom species and try tying your line to the assist hook side it helps with preventing the jig from knocking the assist hook out of the fishes mouth

Look into getting a smoke tube. Adds a lot of smoke and minimal heat. Great for fish and great for cold smoking, like cheese.

In Cuba We didn't eat them because they were always positive for Ciguatera. Here I still test them for Ciguatera But Haven't found anyone yet Positive for Ciguatera, Amberjack in Cuba We name them Coronado. Great Video Aaron.

I would love to see you make a video of you fishing that canal that runs the island. Every time I go down to the keys. Its LOADED with snappers. I've caught some absolutely monster snapper in that canal. Gives me the shakes every time I fish it. Seen them schooling in the hundreds in that little canal. Especially by the pedestrian bridge. I think the bridge is on Eagle Ave?

That Sammich looks great, some avacado with lemon pepper would put it on the next level, we cooked with whole halibuts and sturgeon in places I worked in the past, we would break down cook as usual and worms would rise to the top and we just scrape off, never a complaint or send back,
Love amberjack. Ours in the northern gulf are not as wormy. Under 40” rarely has any at all..

Like that you’re trying jigging. Slow pitch jigging is more about the movement of the jig (emulating a dying bait fish) versus vertical jigging (where you rip it up like escaping bait fish). That’s how slow pitch jiggers do it all day- slowly pitching the jig at +/- half reel crank a time up the water column maybe 20’, then back to the bottom. My experience in deeper water is that you need heavier jigs; they get to the bottom faster and counter the bottom currents better. My go-to weight in 150’ plus is 180gr and up.

Aaron, if you take the backstraps off bonito, we'll bled of course skin them steak them about 1 to 1 1/2" thick, marinate them in Italian salad dressing or some other vinaigrette for a couple hours then grill them hot and quick, I believe you'll be surprised at how good they can be. Still have the belly sections for strip baits.
