As long as all your blocks measure 8.25, then you'll be fine. (Your quilt will just be a tad shorter.) But if each block comes out a different measurement then something is up.
I’m having the same issue. All my blocks are coming out at barely 8.25” and my strips are all 2.5” and sewing with 1/4” seam. So I’m trimming all my blocks at 8.25”.
Take your finished width and add 12 inches. Take that number and divide it by 36, (one yard.) IF your quilt is longer than 38-40 inches. Take the number you just calculated and times it by 2. Then you have your total yardage needed. If your quilt is longer than 80 inches you'll times the width yardage you calculated first by 3. (This is usually common for queen and king sizes.) For twin quilts I rotate the quilt sideways and calculate the longest side first to save on fabric. BUT you need to check with your long arm quilter if you have one to see if they will take vertical backing seams. Some don't since it can become an issue if it isn't pieced correctly. Lastly, 6 inches all around is what I do, calculations for backing can be different than what other longarmers recommend. Best is to ask them if you choose a longarmer.

I have my own long arm machine which I quilt myself. ☺️ The quilting is actually a digital long arm pattern too.

How large would a 2 jelly roll quilt be? Or would I need 3+ for a bed sized quilt
If I had to guess, maybe 4 jelly rolls for a twin size? One jelly roll makes 1 block in theory, so you can try to estimate it by that logic. ☺️
