My take on Mildred’s Hot Dog Chili from Buck’s Drive-in , Saltville, VA

  • Buck’s Drive-In, located in Saltville, VA, has been owned for years by the Maiden family. One of my very best friends is the original owners granddaughters. Unfortunately, I never got to meet Buck before he passed away. However, I did get to meet Mildred (MawMaw) serveral times. She was a total trip. A sassy southern woman with a heart of gold and a very sharp tongue. She passed away several years ago.
    Her hot dog chili was known throughout the region. The recipe was a secret and I never asked for it. So i searched for something similar. As well as I can remember, this is pretty close. Keep in mind, I have not had her amazing chili in over 15 years. This is how I remember it.

    My take on...
    Mildred’s Hot Dog Chili
    1 lb lean ground beef
    1/3 cup water
    15 oz tomato sauce
    1/2 cup ketchup
    2 Tablespoon chili powder
    1 teaspoon seasoning salt
    1 teaspoon pepper
    1-2 teaspoon sugar
    1/2 teaspoon onion powder
    1/2 teaspoon garlic powder
    With a mixer, mix together beef and water until all the chunks are broken up.
    Add remaining ingredients and mix until smooth.
    Cook on simmer for 20 minutes, season to taste.

    Just made Mildred’s Chili recipe, awesome!! I cannot tell you how many chili slaw dogs I ordered standing in the back area at Buck’s. We were good friends and I was her Minister. Over the years Mildred provided many gallons of chili for Vacation Bible School. Mildred’s was the last funeral I preached before leaving Saltville. She was a wonderful lady. Thanks for sharing this!

    I grew up on Mildreds chili . Don’t know how many foot long hot dogs I ate there. Use to buy it for cookouts . Loved it ,

    I’ve been watching a few videos on how to make hotdog chili since my husband and I have recently had a revival of having hotdogs for dinner once in a while lately. I forgot how good they can be. Love lots of crunchy sweet onions! But I also remember trying Coney Island dogs in Detroit years ago on a trip to see probably fellow sort of Canadian Neil Young, and think hotdog chili would be a great thing to try making myself as well. I like how this gentleman does the guy thing and breaks out a power tool to mix the meat. I’m totally going to do that as well! Pop the mixture into my KitchenAid stand mixer - take this baby up a notch!
    I like his basic recipe too but I will tweak it a bit, incorporating some other ideas from other people’s recipes across the great U.S. of A.

      @@TastinAround It did indeed. The Maidens are fine people and the food they served was topnotch. I have been told, however, that MY palette left a lot to be desired but those comments were from people who had never had Mildred's chili nor a double cheeseburger from Buck's. Back in the day when I was in the USMC and got the opportunity to come home, I never missed a chance to stop by Buck's for a couple of dogs, fully loaded.

    Nice job, it is a pretty standard southern chili sauce. Tip, just add enough water to cover the beef (a cup or two) alone with all the other ingredients and then bring to a boil while mixing with a wooden spoon or spatula, no need for the mixer, simmer to reduce the water out. Less mess and better texture in the end.

    Now we know how Bunker Hill makes their chili. One tip: Next time, add about a table spoon of rubbed sage. Also, lots of black pepper and some white pepper will enhance the taste of good chili. Chef Jerry

      Well I haven't ate at Bucks but I grew up eating chili dogs with slaw in Tazewell.
      My brother still lives in Horsemen. The best chili dogs ever. I'm gonna try this recipe for sure ❤

    I do believe she uses Malcolm’s chili from Malcolm’s Meat in Bristol Virginia. In fact, I used to deliver it to Buck’s but the last time I delivered there was in 2004. I was at Buck’s last weekend and they said they still order from Malcolm’s.

      IDK, I just spoke with Mildred's grand daughter. She said her Maw Maw always made her chili. Her grand daughter worked there since she and a child and for while after Mildred passed. She said they did get ground meat from Malcom's but never "pre made" chili.

Buy some Malcolm’s chili and see if it’s the same. I still love Buck’s though. We’re going there tomorrow for lunch. Saltville is having a fishing festival for the kids tomorrow.

    This is the recipe I have been looking for. Too many recipes on here needing the addition of chopped onions during cooking…….usually hot dogs with chili need chopped onions on top after the chili is on the hotdog. I’m from North Carolina and I eat my hotdogs and hamburgers Carolina style……chili, mustard, slaw, and onions. The slaw is mayonnaise based. Yum!

      @@beboboymann3823 I buy a bag of tri-colored slaw in the refrigerated section of the produce department at the supermarket, then I add some Newman’s Own Caesar Salad Dressing. Those two ingredients only. This is a non mayonnaise based coleslaw.

    Just made a double batch. I added 1 lb of leftover smoked hamburger and a teaspoon of beef base. Mixing the beef with a blender is genius. What brand of blender are you using. Wife is impressed.

    Is the "Chili Powder" a blend of Chilli and other spices, or pure ground chilli? If I use 2 TBSP of even my mildest ground chillies in 500g of beef mince it will be way too hot (spices hot) to eat.

      I use Great Value chili powder. The label says :chili pepper, spices, salt.... It is not hot. It is definitely not cayenne pepper! Hope that helps! Thanks for watching!

      Sorry, I misread the comment. You wanted it milder. I would say to lower the black pepper and make sure the chili powder is mild. Disregard the comment about adding hot sauce. Sorry about that!

    Great recipe! What type of hot dog was served back then? Were they skinless? Boiled or grilled? Chili sauce looks good, but I’m sure the type and prep of the dog played a big role. Thanks for the video will be trying it soon.

      They were boiled. As far as brand, I'm not sure what they use. It's not those red ones ...lol. Let me know how it goes!

      Not sure about the place he is talking about but here where I live in NC it was usually Oscar Myer or Armour. They were the "not red" hot dog weiners. If you had the "red ones" it was usually Jesse Jones here in NC.

    If anyone passing thru Connecticut on interstate I-84 stop at Blackies Hot Dog Stand in Cheshire,Ct Easy off and back on. Their relish is well worth the stop. They are closed on Friday do to the Catholic “ No Meat on Friday. They are cash only and have an ATM on site. Last time I stopped there the hot dogs were 2 for $5.00 and the relish was fantastic. They have an online store to buy their relish from. Enjoy

    411 the mixer isn't needed at all. That's toughing the meat just like way over mixing a burger. Just add 1 cup of Cold water in a cold skillet & the meat falls apart with a wooden spoon

    If you use the eggbeaters can you still cover the meat with water and simmer it for an hour?

      I’m not really sure I understand the question. The water and the hand mixer breaks down the meat to smaller pieces. You really don’t cook it until everything is added together. That simmers until done. Does that answer the question?

    The secret to good hotdog chili is put the ground meat into a saucepan of water, then boil it while breaking it apart. That how you eliminate any chunks of meat.

    I am originally from Danville VA we had a place called the Quickie Shop, they had the best slaw dogs, I wish I could find someone that worked there that knew the recipe for the slaw

    Looks good but would be better if you browned the hamburger first and cooked off the water and then added the ingredients,also next time you should put diced vadalia onion in it,cook the onions by themselves until tender and add them to the browned meat and other ingredients

    Have never seen anyone cook anything with a spatula left in the pot as if it was some kind of seasoning!! To help alleviate spatters, just use a larger/deeper pot.

    Hey man looks good. I live not to far south of yall in Kingsport. My wife makes some great food also.
    We just got some chili from the Hot Dog Hut here in town so she cld try n remake it to our taste.

      Good to hear from you! We actually live in Baton Rouge now. Moved down here around 2000. Still have family and friends in your “neck of the woods”! That will always be home to me. Buck’s is still there. Not sure who is running it now.

    Nice technique on breaking up the ground beef to a finer texture. Coney Island shops I am familliar with make it too fine IMO. I like a meaty sauce, not a saucey sauce. I like mine on the spicy side, so I add very finely minced Jalapeno and Serranos. Habanero too if I have one. Though not very successful, I like the fresh ingredients so finely chopped that they are not visibly noticable in the end result. But the flavor is spot on to me. I would use my coney sauce as the base for a chili too. Just add diced onions and bell peppers, minced garlic and can of chopped tomatoes. Beans to. Can't forget beans for a chili. Good to go for a bowl of chili. Just add favorite toppings and enjoy. Toppings for me are diced onions, cheese and oyster crackers.

      This is hot dog sauce, not chili. DO NOT ADD BEANS! Beans do not go on hot dogs. I've been trying to teach Texans that for 35 years now. Ugh

      I know, it seemed odd to me. However, browning the meat would not allow the hot dog chili to be “broken down” into the right consistency. Mixing it with the water does allow that finer “grain”. I thought the flavor might suffer, but it doesn’t.

    Your sound isn’t good sir, we can barely hear you. Isn’t that funny how there would be a little restaurant that wasn’t fancy but oh was it yummy. We had a little drive-in by our home that had the best hamburgers, chili dogs, barbecue beef sandwiches, pork tenderloins and French fries, milk shakes and ice cream cones, sundaes all of the typical stuff and we called it “the Little Ladies” and that wasn’t even the real name. I loved her food.

      Mildred passed away several years ago. The restaurant changed ownership (same family though). Not close to the current owner.
