Best tip I'd give is to really brown the meat. That goes for any recipe with ground beef. So much more flavor. Not a barely cooked light brown, but dark with crusty bits, more like a smashed burger. Mix up a 1/2 tsp of baking soda, 1 Tbsp of water and 1lb of ground beef and let sit for 15 minutes before cooking.

My father loved to make chili. I don't know his recipe but he told me that which ever way you cook it there was his "secret ingredient" that would make any ones chili taste better. When he cooked his chili, just as it got done he would add a heaping table spoon of PEANUT BUTTER to it. PB is a legume and it adds a very faint taste of sweetness while it brings out the taste of the beans. It works great in chili with no beans also. Give it a try and you will be pleasantly surprised.
That gives a very African vibe to this dish. Though my chili is either/and mushrooms/chickpeas in place of meat - being a veggie - the idea of adding some PB sounds delicious.

I like your recipe, I make mine similar but instead of tomato juice, I use V-8. I make very thick chili and the V-8 helps thin it just a little and it keeps the tomato flavor going. I also use garlic. Thank you for sharing!
Spaghetti sauce also works well. And you can get a can/jar for like a buck. I have used Carroll Shelby’s chili seasoning since the 80’s also. I love adding the cayenne pepper packet, i can use the whole packet, but when my grandchildren are over, i use just a pinch. It has the best spices, and as you said “ the perfect amount of seasoning, especially cumin, and that makes it taste amazing! It is getting the time of year we do chili, hotdogs over a fire, slaw, and for desert: roasted marshmallows. We cut sticks about 4 ft long from hardwood trees, burn the ends we sharpen to slide the hotdogs and marshmallows on, and roast them slowly. Makes great chili dogs!!!!
I have always gotten compliments on my chili, saying it was the best. Mine is very similar to yours, makes me happy to know i did somthing right after many years of trial and error. Great job cheers!

I made a batch and canned several pints a year ago. Finally ran out so, it's time to whip up another batch. I think this time, I will add a few Serrano peppers to imbue a bit more spice.
Yes, but you do have to add a package of Williams chili mix to that that adds the color and tops off the flavor. I still do chili cook off in Texas and one eight out of 10 you will not be disappointed.
Thank you for sharing your recipe! You're absolutely correct in the red wine vinegar, it really adds a depth of flavor to the chili! I wouldn't have thought of adding it, so good call!! Stay well sir & thank you again!
No wonder I like my chili, I have been using that seasoning and vegetables like you showed us here today. But I am going to try V-8 juice just for fun. Thanks ,great video!
Spaghetti sauce also works as a really easy "tomato base" to simmer it all in at the end. And you can get a jar or a can for like a buck. So, super cheap addition.
@@So_So_Good I give you MY AWARD for the Best Chili. I am making it at this very second. I will NEVER SHARE YOUR SECRETE! I used to experiment with paste crushed this and that, but you my friend have unlocked the BEST CHILI, That I have ever tasted.
I've been using this chili for years. Carrol Shelby deserves the credit for making the best chili kit out there. The kit tells you to add other things you like. I always add the onion, green pepper, pinto beans, and dice tomatoes .l use real chuck steak or sirloin meat chunks instead of ground beef. It always turns out great! Serve it with cheddar cheese and sour cream and your in heaven!
Enjoy it as you wish. That's what makes Chili so interesting. It can be enjoyed in so many ways. I'm just giving you here what works for ME! Yours sounds good too!
I discovered Carrol Shelly's Chili Seasoning decades ago. It is still The Best! I'll give your version a try. (I already use V-8 [style] vegetable juice, so Imma thinkin' tomato juice will be great, as well)
This looks great and I can't wait to try it. However, I do have a question. Do you cook the chili for three hours, add the seasoning and vinegar, and then cook for an additional three hours? Thanks.
Hood Sir. , I just made this and ....... my mind is BLOWN !!!!. This is the BEST Chili I've ever eaten ,.... better than Wendy's !!. Thank you soooooo much for sharing your recipe 💓💓💓💓💓💓💓👍👍👍👍👍👍👍😄
The dude is correct, this chili is frigging awesome! I used V8 because I like drinking that more than tomato juice. The vinegar adds a special "something" also. I threw in a Tbl of my homemade chili powder, I'm used to powerful stuff :). VERY VERY GOOD!!!! Paired with homemade cornbread made with cream corn and buttermilk.
I have my own recipe I'm quite fond of and never eat it until it's been in the fridge for at least two days. This goes for anything I make with sauce like yellow curry as well. That time it sits works some sort of magic.
"Peculation" *of the ingredients*. I bet this gentleman would have won even more comps if he did this ;) It's a key factor for anything that is braised / simmered, like stew, pasta sauces etc. Takes more effort in prep and lead time but yes, 100%. I'd imagine anyone that did this one would have loved it even more if they let it setup longer.
I'm going to give this a try. I've been using the same basic recipe since Moses was in short pants, so maybe it's time for a new one. The vinegar is rather intriguing.
my mom use to use about 4-6 small cans of campbels tomato sauce for the base, it was sweet and good, she always made it that way and only used dark kidney beans..........i am going to try your recipe next month and will let you know how i like it. i ordered a box of Shelby Chili Kit i will use that so i duplicate your recipe down to the bottom of the cooking pot..............cheers and God bless
I’m making this tonight for Father’s Day. My dads favorite meal is chili. I’ve never used tomato juice can’t wait to try this! Thank you. Hi from a fellow Orange County girl!
Amazing chili. All I did different was to use Suckle Busters SPG instead of salt and pepper and I also added a little extra chili powder, oregano and cumin since the Carroll Shelby package is for 2 lbs of beef and I used 3 lbs. This is the most delicious chili I've had.
I have been cooking chili for forty years and this is the best recipe yet. By far! I've made my own chili powder by toasting and grinding dried peppers and all that jazz. But that Carrol Shelby's mixture is perfect. I will never use another chili powder again. Thank you so much for sharing this, Gary. You have changed my chili-cooking ways!
loved your video - i've never tried red wine & bell pepper and will give your recipe a try. I also make my own chili & beans - make my own tomato sauce from diced fresh tomatoes with tomato paste, sautéed onions & garlic, dried kidney beans soaked in water the night before, and cumin powder, salt & pepper - slow cook overnight thus chili beans for breakfast haha
Looks wonderful. I usually soak red beans overnight and then boil them until soft separately from the seasoned protein, veggies, and spices. I then remove the soft beans from the water to add to the tomato based stew and adjust the seasonings. I also like to add smoked paprika and cloves. Soaking the beans begins the growing process, which increases the nutritional value.
I have made this chili multiple times now, it is the best chili I have ever had. 🙌🏼 I brown my beef and onion/pepper, then assemble in the crockpot and leave on low all day. Perfection!
Made this for dinner tonight! Followed your ingredient list and measurements, but subbed out for brands available at my grocer. It was a hit! Thanks man!

Wow I never thought to put vinegar in chilli. I will try that next time I make it. I use tomato passata instead of juice but I guess they're very similar and I like cannellini and kidney beans. Thank you so much for sharing your recipe. It looks delicious.
Hmmm, the red wine vinegar, eh? Have not tried that, but I will now. Carroll Shelby Chili Seasoning got it. Here in the East, you can get Vidalia Onions from Georgia which are very sweet and sautee wonderfully! I discover using A1 steak sauce really adds a great new taste dimension to chili.
Sir....when I saw your "award winning" title I thought, "Oh man...another guy with some super special *secret* recipe that he takes around the country trying to realize some lifelong dream....." But then, as I saw you create your masterpiece I was AMAZED by how similar your recipe is to the one I developed about 20 years ago!! "Finally!" I thought....someone who understands that the best chili is made with simple, basic - but AWESOME - ingredients! Our approach is almost identical. Two minor differences: I don't use red wine vinegar, but I do add a splash of red wine or apple cider vinegar. Instead of the Shelby seasoning I use the original McCormick. And rather than the tomato juice I use tomato sauce. Other than that, we cook the same chili! Thank you for validating my approach and giving me a couple great ideas!
Jake Mitchell "Other than that..." Oh yeah? with all those differences you use it can't be "the same chili". If you want to promote your own chili recipe get a camera and post a video here for all to see. This guy's chili is the bomb!
@@robertpatterson3321 I didn't mean to offend, Mr. Patterson. And certainly my goal is not to promote my own recipe. I'm a simple man who just cooks for his family and friends. The recipe featured in this video is incredibly close to my heart, because it's so similar to how my dad cooked chili. Unfortunately, he passed away from brain cancer 3 months ago, and he never shared his "secret" with me. So I was just listing the ways my attempt at Dad's recipe differed from what was featured in this fine video. I'm sorry if I came across too strong. Certainly it wasn't what I intended. God Bless.
@@jakemitchell1671 Don't worry, Robert was just being "sour grapes." My chili recipe isn't "exactly the same" as his either, but it's pretty damn similar too, spiritually, in some of the things it uses. So, who gives a damn if it's not "exactly the same." No two recipes are gonna' be "exactly the same," nor should they need to be, in order to be "similar." Mr "holier-than-thou" / "sour grapes" can pretty much just sod off and go work out his anger issues someplace else... This ain't the forum for that. We're just enjoying sharing good chili recipes, tips, and tricks. Like, to me, small red beans & black beans are better than kidney beans (which, IMO are a bit too gritty), and I use spaghetti sauce as opposed to tomato juice for the tomato base/stock (but it's the same basic concept), and I use steak sauce instead of vinegar (adapted from an old Lea & Perrin's recipe like "meat skillet," or something, which I've edited and upgraded bit by bit into chili over the years), but the steak sauce has vinegar as one of its main ingredients, so fills the same basic function. So, there's definitely a lot of parallels with what he's doing. And I definitely recognize how I make chili in how he makes chili. Is mine exactly the same? Heck no. Not claiming it is. Is it pretty spiritually similar with a similar end product? Heck yeah! And it's delicious... Haven't made it proper in a while, but maybe I will soon. Yum! ^_^
I do not think I have made a pot of chili the same in 40 years. I just grab what I have. Some include beef and beans. Some pots were ground pork. A few had Italian ground sausage. I do use kidney beans, but not always. I have made chili very similar to the above. Thank you for your post.
When you added tomato juice it brought many memories of my mom making spaghetti sauce...she only used tomato juice to make her sauce and since we were in school we ever knew what else she put in it...she died very young and took her recipe with het... Thanks for the memories
I'm glad to see someone else use vinegar in their chili. I've been doing that for years but have been using the natural apple cider vinegar, Bragg's brand "with the mother". I look forward to trying your recipe soon! Thank you for the video!
Looks killer. I’ve always used the vinegar in the big cans of pickled whole jalapeños. I transfer them into a glass jar and use the juice in my cooking. Soups stews, bean soups, and especially chili! I like Shelby’s but I LOVE “Wick Fowlers 2Alarm” ( I make mine 3 alarm ) for a real bowl of Texas Red… But I must admit, Shelby’s is no slouch either…
Nice! This is basically the same recipe I use, except I add chopped celery, use fresh diced tomatoes not canned, I add pepper, onion powder and cumin and a couple of chopped Japaleno peppers.
I made this, I have a huge pot and we freeze a lot, so I doubled your recipe, and used 2 lrg cans of V8, fantastic my friend, I have been using Caroll Shelby for about 5 years now, the only thing I do different, is I chop about 5 tbls of jalepeno`s I can every year, we like heat, outstanding sir.
Looks like a tasty meal. I will give it a try minus the beans. I know some people like beans in there but I am not a fan, beside both my mother and grandmother would disown me if I put beans in chili. :) Chili has started almost as many feuds as BBQ. :) LOL

I am totally impressed!!!! The tomato juice is the secret!!!! Hats off to you for sharing....the longer mine sit the better it got til I had to say to you....Awesome!!!
I've made his chili to a T. EVERYONE WANTS THE RECIPE, THEY THINK IM AN UNBELIEVABLE CHEF AND IF YOU MAKE IT, YOU WILL BE THE STAR OF THE SHOW ! Making it as we speak per request of several friends and family! 😍😍😍
where did you get the recipe?

Sorry, look at his description under the video where the word MORE. CLICK THAT and it will be there for a screenshot 😉
Cannot wait to make this marvelous recipe! WHAT A TREASURE!
I have always gotten compliments on my chili, saying it was the best. Mine is very similar to yours, makes me happy to know i did somthing right after many years of trial and error. Great job cheers!
@@Lettuce-and-Tomatoes No i use a secret concoction and ultimate herbs and spices only that of the elder gods know. Then i eat a handful of elderberries to summon the knowledge of the gods to bless me with the spoon of infinite wisdom. After many hours of alchemic concotions of outterworldy epicness, and chants of elder tounge I then have the chili blessed by the elder gods.
I made a batch and canned several pints a year ago. Finally ran out so, it's time to whip up another batch. I think this time, I will add a few Serrano peppers to imbue a bit more spice.
haha
I too have made this recipe and I enjoyed it it was wonderful and your presentation was wonderful
Carrol Shelby does make the best chili powder mix. I've been using it since the 80's.
The auto engineer?
@@abelq8008 Yep. same guy.
Very smart move using the Shelby mix. Been using it for years and love it.
Q please...I see a packet in the kit called Masa. He only used the seasoning packet it appeared, do you use Masa? Thanks much.
Just made it and it is delicious. Thank you so much for the recipe!!
I have made chili with your recipe and it is easy and very good... Thank you. It will be in my recipe book.
Glad you tried it and liked it
@@So_So_Good I give you MY AWARD for the Best Chili. I am making it at this very second. I will NEVER SHARE YOUR SECRETE! I used to experiment with paste crushed this and that, but you my friend have unlocked the BEST CHILI, That I have ever tasted.
Wow you are so generous sharing your secret recipe, I can’t wait to try it! Thank you!
You are so welcome!
Did you add the vinegar and shelby's after the 3 hours, the video shows it after you said three hours?
I've been using this chili for years. Carrol Shelby deserves the credit for making the best chili kit out there. The kit tells you to add other things you like. I always add the onion, green pepper, pinto beans, and dice tomatoes .l use real chuck steak or sirloin meat chunks instead of ground beef. It always turns out great! Serve it with cheddar cheese and sour cream and your in heaven!
Enjoy it as you wish. That's what makes Chili so interesting. It can be enjoyed in so many ways. I'm just giving you here what works for ME! Yours sounds good too!
What type or brand of tomato juce did you use!
This is the best chili recipe thanks

I discovered Carrol Shelly's Chili Seasoning decades ago. It is still The Best! I'll give your version a try. (I already use V-8 [style] vegetable juice, so Imma thinkin' tomato juice will be great, as well)
Watkins Way - getting to be that time of year for us here in Wisconsin. I will be making your chili this winter. Looks mighty tasty!
Hope you enjoy
I'll give the Caroll mix a try. Spent time in Laguna Beach, CA - beautiful place.
Thanks for the video.
I used this recipe and came in 2nd place at our church chili cookoff.thank you for sharing this video....excellent recipe
Seems like cheating... the church would not approve.
Who was the other person in the contest?
This looks great and I can't wait to try it. However, I do have a question. Do you cook the chili for three hours, add the seasoning and vinegar, and then cook for an additional three hours? Thanks.
it appears he initially forgot to include the Carol Sheby before he let it look for 3 hours but chose not to edit it. So just 3 hours total.
The sequence is confusing when it comes to the seasoning packet and vinegar. I guess everything gets put in the pot and let it cook for 3 to 4 hours.
@@joannevisbaras3737cook the first segment like it is and then add the chili seasoning for the second and cook on low simmer for an additional 3-4 hrs
I've not had chilli in decades, I'm really looking forward to making some, I'm drooling just watching this.
No chili in decades??? You poor soul... 🥲
Hood Sir. ,
I just made this and ....... my mind is BLOWN !!!!.
Yum
That looks amazing...my father used to use Shelby spice mix, this took me back, I will be trying this soon!
I'd imagine anyone that did this one would have loved it even more if they let it setup longer.
chili always tastes about 10 times better if you stick it in the fridge overnight.........great idea for everyone to follow.................ray
Made this yesterday. Perfect ratio of ingredients in every bite. delicious!
Glad you liked it!!
I’m making this tonight for Father’s Day. My dads favorite meal is chili. I’ve never used tomato juice can’t wait to try this! Thank you. Hi from a fellow Orange County girl!
What did your dad think?
Spaghetti sauce works just as well as a tomato base/stock, and it's dirt cheap, like a buck a can (sometimes less?)...
That looked amazing! I sure wish I had a bowl of that to try!
I'd give you one but you'd have to stop kissing ass.
I made this recipe and it was very good. Thank you for sharing.
Amazing chili. All I did different was to use Suckle Busters SPG instead of salt and pepper and I also added a little extra chili powder, oregano and cumin since the Carroll Shelby package is for 2 lbs of beef and I used 3 lbs.
This is the most delicious chili I've had.
are you really allowed to use pre-mix off the shelf spice mixes in chilli competitions?
A lot of chili competition recipes i have seen have spice mixes in them.
Great to hear! Thanks for sharing your thoughts
Better you check recent comments on their website, the mix changed and customers are not that happy.
loved your video - i've never tried red wine & bell pepper and will give your recipe a try. I also make my own chili & beans - make my own tomato sauce from diced fresh tomatoes with tomato paste, sautéed onions & garlic, dried kidney beans soaked in water the night before, and cumin powder, salt & pepper - slow cook overnight thus chili beans for breakfast haha
Definitely a breakfast food we LOVE to make omelets the next day with chili, shredded cheddar and a dollop of sour cream, YUM!!
Perfection!
Sounds great! Thanks for giving it a try
Made this for dinner tonight! Followed your ingredient list and measurements, but subbed out for brands available at my grocer. It was a hit! Thanks man!

So glad i came across your channel. Believe it or not I've only tried chilli 2x in my life time. Dont know anything about chilli.... BUT Super Excited to try your award winning recipe. Already made the list to grocery shop. Best of luck to your channel 👍 😀
Thanks for the advice . I was able to learn some techniques to make my chili better . Keep on with these cooking videos . Peace
Great compliment 🤠
God Bless.
@@jakemitchell1671 Don't worry, Robert was just being "sour grapes."
My chili recipe isn't "exactly the same" as his either, but it's pretty damn similar too, spiritually, in some of the things it uses. So, who gives a damn if it's not "exactly the same." No two recipes are gonna' be "exactly the same," nor should they need to be, in order to be "similar."
Mr "holier-than-thou" / "sour grapes" can pretty much just sod off and go work out his anger issues someplace else...
Yum! ^_^
I made this and it was exactly what chili should be! So, I’m going to make it again this weekend 😊
Looks delishous 😋 I will try this , a lower sodium method ,store bought is so salty ,and greasy., Great recipe..
The chili looks good, andtastes even better! Thank you for your recipe!
Looks very tasty. Would go great with some cornbread or rolls, thanks for the recipe!
It sounds a lot like the way I make chili but I've never used the red wine vinegar. I may give that a try. Enjoyed the video!
I use red wine vinger in my pot roast and ox tails 😜
I get real suspicious of anyone that claims winning multiple chili cookouts, especially with off the shelf store bought chili seasoning.
I’ve made chili from his directions 5 times. Love it! ❤
Thanks for watching!
I like Shelby’s but I LOVE “Wick Fowlers 2Alarm” ( I make mine 3 alarm ) for a real bowl of Texas Red…
But I must admit, Shelby’s is no slouch either…
@@igorshunch your comment just gave me some very good ideas, I LOVE pickled jalapeño & they are always in my fridge! Thanks ❤️
I just use steak sauce, which already has vinegar in it... Plus a bunch of other yummy good stuff (sugar, spices, etc.).
I have used different types of vinegar, but it is important not to overdo the vinegar a little goes a long way...

Your recipe sounds way better

:) LOL
That chili in a box is the best they make. Been using the same one for over 20 years.
