You're not calibrating it. You're just zeroing it. And you've set it to zero on the frame and then bounced and shifted the heli all over the place. Dreadful technique.
@valderja if someone doesn't have the sense to keep the heli in the same place on a level surface for this task then they probably shouldn't be trying to fly one!
Ideally, table and heli should be leveled first (imo).
Should a pitch curve and aileron curve be selected for this or does it really matter? Thanks.

You could of levelled your bench using a sheet of timber using a spirit level...
