Place a sunny side up fried egg on top of it and top with kewpie mayo and oyster sauce :P
That is great because my understanding is this recipe was created after WWII when food was scarce. It's an easy way to stretch out cabbage and flour to a filling meal (they probably didn't include any meat/fish back then). So, that's very much in the spirit of the original recipe.

I first made okonomiyakis for my bf about a year ago bc I thought it’d be nice to get more variety in our stay-in dinner date meals. Totally backfired bc then it was like the only thing he wanted for dinner and they were kinda time consuming (I’d made crunchy tempura bits and extra toppings). Eventually I said we could keep having them if HE made them, so I took him with me to the Asian market, showed him where everything was, and taught him how to make them. Now it’s un-backfired bc I get to eat okonomiyakis 2+ times a month but someone else does all the work lol. He’s even come up with a keto version, and a “southerner style”.
I’ve been making this for a few years and it’s amazing. My wife lived in japan and asked me to learn how to make it and it is easily my favorite thing to make and eat. Worth the effort.
Not true: even Vikings have cabbage, onions and eggs and flour and dashi can be made with any fish and seaweed stuff like dried sardines etc. Japanese quisin can easily be adapted to local ingredients... F.e. mayo can be diy'd etc. 🙃
This is real authentic!! Even with the homemade okonomiyaki sauce, it seems pretty close to the real thing for me. I think there are some tiny differences, like how in my family we have a massive hot plate and while we're cooking the main pancake we'll fry the pork belly and shrimps on the side and pop them on right before we flip it. We'll also do whole shrimp rather than cutting it into small pieces, and we'll get squid too. Also pro tip: once you've turned the pancake over poke holes in it with chopsticks to get heat coming through more easily! But yea sick vid!
The okonomiyaki sauce here in this video is an American version. Traditional Japanese is a plum, dates and peach based sauce called Otafuku. The recipe varies a great deal from region to region. In Australia most places use Teriyaki sauce or a BBQ sauce. Of course choose the sauce you like best and don't forget the Kewpie mayo! :)
I've made Okonomiyaki dozens of times and just tried your recipe. It was great. It was my first time making the sauce and I was impressed. I still added Yamaimo since my Osaka friends swear by it, but I might try a side by side comparison since I'm not convinced it's necessary. I substituted flour and soy sauce with Cassava flour and tamari for my Gluten Free friends. I don't know any GF substitutes for Worcestershire sauce.

Josh, I'm writing to thank you. I had never heard of this before it was served up on my TH-cam feed. I live in the UK and spend time with the family in northern europe. My daughter is coeliac and a veg avoider. This can be twisted into a GF delight with 30% veg. With finely shredded cabbage, softened onions, kwispy bacon and bbq sauce it gets inhaled. And it's done from start to washing up in 30min.
to add to the tempura scrap part, you can compromise by using either a poder tempura and making into a batter OR making your own regular batter with just flour(idk of itll be the same consistency) then you make little droplets onto a pot of hot oil, youre basically frying your own tempura scraps. As for making the little drops, using a fork should help, dip a fork into the batter then let bits of batter drip onto the hot oil.
Nice to find a recipe that doesn't expect me to grate my own yamaimo! Saving this one for its feasibility. Also, it's not good okonomiyaki unless those bonito flakes are dancing!
I saw this video today and happened to have all the ingredients to make this, except the dashi broth (I used a tablespoon of fish sauce instead). And it was so tasty and super easy!!!!! I will be making more tomorrow.
Hey, Joshua, I'd love to see your take on the traditional Finnish Karelian pies (rice pies) - they're super tasty open crispy pies with delicious rice with egg filling - they're absolutely delicious when done right, yet they're simple, so I'd like to see how you can super-upgrade them with your skills. :)
Obviously you just have to fly to Japan, purchase the ingredients and fly back. Easy peasy. Or you might be able to find them on Amazon, I haven’t checked.
just found this channel and i like this guy's style. definitely gonna try his dashi recipe and to put together something resembling an Okonomiyaki when I get a chance to go out to the asian market again
I like to cook my bacon or pork belly on one side, render out some fat, then cook the pancake in that pork fat. Crispy side gets laid down on the top before flipping, this ensures both sides get cooked and get the crispy texture I like. I also like to add mirin to the batter, I find it browns up a bit better. Just my preference, but give it a try some time.
If you have access to it, add grated Nagaimo/Yamaimo, Japanese long/mountain yam to the batter. The texture gets so much better due to the gooey structure of the yam 😍

Don't be afraid, Karen. This dish is very casual (actually a street/festival food) and mix the batter, cook it like a pancake, and put the sauce and the Kewpie mayo on the top. You can omit or add some ingredients (meat, seafood, Chinese noodle, fried eggs, powdered green seaweed (Ao-nori) and so on) as you like.

A bit of sweetened Worcester will do it! The fish flakes are da-bomb-dot-com, but u can omit if u don't have. It's a very tasty dish, like the name says "as u like it" . Super tasty and very adaptable to what u have at home.
yay! this is my favourite snack. they sell it at markets where i grew up and we share it w friends, they dont cut it we just go at it with forks. i eat from the middle bcus it's sauciest. if u can't find tempura scraps btw friends u can make it by mixing up some tempura batter and using a fork or something drip it into the hot oil !
In Tokyo we were given a large bowl with everything in it, i would suggest its one of those family recipes that everyone has a version of, as i have had them at markets back home and they are all a little different

Theodore Stoddard there’s nothing about noodles in the word. Okonomi means preference and yaki means to fry.

I think I'll just use shrimp or chicken broth instead of dashi and use regular pickled veggies instead of pickled ginger and skip the Bonito.

Just an FYI from someone who lived in Japan several years and has a Japanese wife. Okonomi is pronounced like Economy with an O. So Oconomy yaki.
