Scientifically speaking, it may be safe without washing, but since chicken usually has a bad smell, it is better to wash it under slightly running water as it does not have a bad smell. If you don't have potato starch, you can also use normal flour. I don’t think it needs to be too crispy because the seasoning sauce cover to the outside.🥰

Rice flour or starch powder can be used as a substitute for flour... Well, I haven't tested it with that, so it's hard to guarantee the results. Sorry... You can use any regular flour you can find. I wish you success.
