Thanks for this. I was actually looking for a pavlova recipe from someone I could trust as I have a bunch of egg whites in the freezer after another recipe I made with the egg yolks. I confess but I will just buy a jar of lemon curd.

I would dearly love to try to make this. Do you have to use unwaxed lemons? Also, I have no stand mixer, so would the whites reach the right consistency with a hand held mixer? (If my arms don't drop off...)
I used a hand mixer and it all came out great.
Yes hand mixer or whisk will work too, just be prepared to work hard and yes use unwaxed lemons

@@FoodwithChetna Oh now, that depends on where you are on the baking scale of experience. For some, separating eggs can be a challenge. Little bits of yolk in the white etc. And for some of us, no stand mixer. But it is a beautiful dessert you have made.
Never heard of Pavlova before--apparently from down under and named for a ballerina--but it looks great.
