- Already made a Pavlova? Well now you can make the BEST Pavlova. A Pavlova with a crispy outside and a marshmallowy soft centre. It’s easier than you might think so let Sally show you all the tips to get you baking the best Pavlova you ever did. You can fill it with whatever fruit you like, and of course cream, there has to be cream!

For the Pavlova Meringue:
4 Medium Egg Whites
220g Caster Sugar
2 tsp Lemon Juice (or Cider vinegar, or Cream of tartar)
½ tsp Vanilla Extract - GET YOURS HERE: cupcakejemma.c...
2 tsp Corn Flour
For the Chantilly Cream:
200ml Double Cream
1 tbsp Icing Sugar
Fruit of your choice!
Baking instructions:
Preheat oven to 130C
Bake for 10 mins
Turn oven down to 100C
Bake for 90 mins
Turn oven off and let the meringue cool down with the oven

BEST RECIPE EVER! I was never fan of anything meringue (because they were always hard) but recently decided to make a pavlova. The first recipe (Zoe something) was terrible. Your recipe is perfect! And has fewer ingredients! My pavlova was almost as beautiful as yours ! Everyone loved it! But the most important part is I now like meringue, especially your pavlova recipe. Thank you soooo much for sharing! I even got a request to make it for $. What?!?! So exciting!
Also! Tip for anyone interested, I painted the cracks gold and it was a lovely touch to the cake. (My first comment ever! Had to let you know how much I enjoy and will enjoy the recipe/cake).
2 years late but finally made this beauty for a family get together- so easy and came together perfectly! Used your lemon curd recipe which added a nice zing to the sweetness of the meringue. Always a success when I bake with y’all 👏🏼🍰💯
Here is Aus we usually add passionfruit and kiwi fruit for some tartness. So good. My fav summer dessert.

My pavlova became dark in colour,130c it became light brown
Then to less than100
I did not put the corn flour as I did not have any but it turned out delicious. Marshmellowy middle with pistachio and chocolate custard and strawberries!! I can not thank this channel enough. It made my year!

Hey areeba if you're in the pakistan region I recommend bakers semi sweet or dark chocolate. You can get a 500g slab for an affordable price and it lasts a while as well.
I've been requesting that for years! I want to learn more about the composition of different chocolates and all about tempering them. Although from what I've seen on this channel, the choice of chocolate is mostly a personal preference and depends on how sweet the rest of the ingredients are and how sweet you want to final product to be.

That was an excellent tip about wiping the utensils down for any potential residual fat. I’m sure ppl have followed a Pav recipe to the tee only for it to flop and then wonder why?? Thank you, you are excellent! It’s the little things that make the difference 😊
I always use extra egg yolks for hollandaise sauce. If you make it in the sous vide, it doesn't separate back apart. So I'll usually make a nice big batch then freeze in cube and I always have some I can just thaw in hot water to go on a dish :)

My favourite dessert ever!! It’s so simple and soft and creamy and my favourite topping is lots of berries and passion fruit coulis!! DELICIOUS 😋😋😋
My favorite dessert to make is a meringue made with hazelnuts, spread with dark chocolate ganache, topped with fresh chopped strawberries, topped and repeated, then covered in whipped cream. It is sublime. Many "Pavs" are not crispy and marshmallowy, which is essential to any Pavlova. Jemma knows what she's doing! As it turns out, the really expensive vanilla pastes and essences are not any better than high quality imitation vanilla flavoring.

My favorite pavlova is an almond meringue with Chantilly cream and cherries. It’s perfect for late summer.
Oooh that sounds good. Would you mind sharing your recipe? I have a Pav in the oven. I'm going to mix some lemon curd into some whipped heavy cream then add my strawberries, raspberries and blueberries. The only other flavored Pav I've made was Banoffee. I actually made it a double decker, lol. It too was tasty...

Sally! What an interestingly and refreshingly unique way to form your meringue. The technique of using the offset spatula to make swirls and a dome shape is truly an invention of your very own. No one has made a pavlova like that that I have seen in my whole life. It is like a mound of creamy, fruity deliciousness in a modern shape. It is like when you put on the headband in the morning to match your outfit, the headband gives you superpowers and gets your creative juices going to create your next masterpiece! Like you putting on your headband is like Tony Stark putting on his iron man badge to get the power to fly and fight crime! Also once you are done baking, maybe you should keep the black latex gloves on, even if you are not going to bake anymore, because the black really matches your outfits and it is a real look! You should take those black gloves for an upscale party and stuff!
I purchased a gram/ounce scale so I can bake right along with the Brits and other wonderfull bakers! also just purchased a bottle of the vanilla. Can’t wait to try this!
Same we don’t have a scale for cup sizes as I can’t get on with the cups !!

I finally started actually making the recipes last November after getting a stand mixer. I’m addicted. I bake something at least once a week now. It’s fulfilling and keeps my mind off of the madness going on outside. I find that preppy kitchen has the best instructional videos.

Pavlova is my favourite cake, and luckily for me, it’s tradition to bake it for our country’s independance day the 17th of may 😁 so I pretty much get to gorge myself on it once a year.

Did my own version last night for Father’s Day and since I live in the tropics I used dragon fruit. It was soooo goood 😋😋😋😊😊👍👍 thank you, but for people who are trying to cut down their sugar intake maybe a lil less sugar. I’m going to bake less sugar now I hope it doesn’t affect the cake :) 🤞
As an Aussie with lots of pav experience, the reason this pav comes out tasting too sweet is that it is too narrow. So there is not enough cream and fruit to the ratio of the meringue. It is supposed to have 300 MLS of cream, not 200. By spreading the meringue out and adding more cream and lot os fruit, the flavour balance is very different - less sweet, more creamy and lots of tang from the fruit. We also add passionfruit which adds tang and takes away the sweetness.

A well made pavalova is such a delight to the senses. I highly recommend. Utterly delicious.
I've made 2 of these this week to test out the recipe - the first one came out gorgeous, but I used 2 tsp of cream of tartar as the acid to reduce the amount of water in it. If you value your tastebuds, stick to the lemon juice or the vinegar cause these don't affect the taste. I made a second one a few days later using the apple cider vinegar instead to see if the pavlova would still turn out looking the same, and aside from a little bubbling on the surface there was no difference in appearance, but it tasted as good as the storebought ones! Neither of the pavs collapsed (which is a first for me), the crust on the outside was about 5mm thick and was quite sturdy, and there was plenty of the soft centre as well. And I made the first one with a whisk, so it's possible to make it without an electric mixer - definitely my go to recipe from now on!
