Vieux Carré - New Orleans Best Cocktail That Was Nearly Forgotten

  • This Post-Prohibition classic made with Rye Whiskey, Cognac style Brandy, Sweet Vermouth, Bénédictine, Aromatic Bitters and Peychaud's Bitters was nearly lost until it was given new life in Ted Haigh's book, Vintage Spirits and Forgotten Cocktails. Haigh fully credits Chuck Taggert and his blog GumboPages.com for rediscovering this drink that had been all but forgotten, even by some of the staff of the Hotel Monteleone where it had been invented.
    The name of the drink is the French term, "Old Square," which is how they refer to the French Quarter in New Orleans. It has a lot of the city's favorite ingredients, Rye and Peychauds, which make up the Sazerac ( • Sazerac - The Official... ), Brandy, which was in the original Sazerac. Benedictine always pairs well with Brandy. Rye, Sweet Vermouth and Angostura are the components that make up a Manhattan ( • Manhattan - The Classi... ). This is like a Manhattan on steroids, done the New Orleans way.
    As for the Rye, Sazerac Rye Whiskey would probably be the most appropriate. I use Rittenhouse because it's what I keep in stock. Benedictine is a great liqueur that was used in a lot of old cocktails. Be sure to get a bottle of real Benedictine and not the pre-mixed cocktail B&B, which has Benedictine in it.
    This is my favorite cocktail for Mardi Gras and one of my favorite cocktails, period. You should add this one to your personal arsenal and make sure you always keep these ingredients in stock in your home bar. Cheers!
    Recipe:
    1 oz Rye
    1 oz Brandy
    1 oz Sweet Vermouth
    1 tsp Benedictine
    2 dashes Angostura Bitters
    2 dashes Peychaud's Bitters
    garnish Lemon Twist
    Stir with ice in a mixing glass. Strain over large ice into rocks glass. Garnish with Lemon Twist.

    Hubby just saw me watching this and, just looking at the list of necessities asked "do we have all that?" Yes. "Sweet vermouth?" Which brand would you like? Yes, I have a well-stocked bar. Thanks for reminding me of a great cocktail. We're sipping one tonight.

    Being from New Orleans, I love a good Sazerac, and while I do love a good Vieux Carré, I find that the La Louisiane cocktail is superior when I want a Manhattan style New Orleans cocktail.

    I tried this cocktail for the first time last weekend at a fantastic old-school bar in London. It was just about the best damn drink I've ever had. Instant favourite.

    Wonderful drink. Tonight I tried using DOM B&B in place of the brandy and Benedictine because I didn't have Benedictine alone: still delicious!

      It's definitely a bit sweeter, but it's still in the same ball park IMO. I love the combination of Benedictine and bitters, especially Angostura.

      Well, kind of. It's well known to bars and bartenders with really solid bar programs. But I wouldn't say you could get it at every bar.

      gotcha! found a place nearby that has a barrel aged version of this so gotta try it. they also have a smoke and mirrors but it's quite different than yours ha

      Yeah, I don't think anyone is going to be making my drink called Smoke and Mirrors. At the time, I didn't see that name associated with a drink, but it's too common of a phrase not to get used elsewhere.
      If you have a bar that does a barrel-aged Vieux Carré, they'll definitely do a fresh one. Try them back to back. It's really interesting to taste the difference. Cheers!

    If I ever open a bar I would hire you as a consultant.
    Every bartender, especially in Los Angeles, needs to watch and learn from you. I'm tired of going to bars that don't know how to make a proper cocktail. LA is good with the fruity smoothie type of drinks (not a fan), but cannot make a "man's cocktail".
    I'm tired of going to bars and asking for a certain drink and they have to google it, not have the proper stock, etc. Then when they make it, tastes like s***. They put too much liquor or not enough. If I wanted an over pour I would've stay home and take shots!
    Although, there was this one whiskey bar by my house that had great bartenders but recently closed.
    I think I'm going to start going around bars and handing out a flyer promoting your channel to every bartender.

Sassafras, Seventy7, Caña Rum Bar, Seven Grand, Cole's / The Varnish, Bow & Truss has a good cocktail program, Neat Bar is moving to NoHo, Catcher in the Rye, Library Bar (DTLA), A-Frame has good cocktails, The Wallace, East Borough, Tiki No (great if you like rum and classic Tiki cocktails), Gracias Madre (if you dig Mezcal, in particular).       Neat Bar was the one by my house in Glendale. So it's moving, not closed! This is great news, I can go and get my Gold Rush again. I like how they add ginger to it, which makes it a bit more refreshing. Library bar is next on my to try list and it's close to my work too. Never heard of the rest, but am going to try!       So, it turns out the Neat Bar did not move, but the guy who set up Neat Bar also built Bar Toni, inside of Little Toni's in NoHo. The building that was Neat Bar is now called Sidebar. It looks like it's still a cool spot so you'll have to check it out and see if they can get you a Gold Rush.

    You should try it with an orange peel rather than a lemon one. That's how i always make my vieux carré. Try it and give me your feedback.
