Baking soda and cornstarch are used to tenderise the beef. It's called velveting . Look it up on TH-cam, it's pretty cool. I think the rule of thumb is, when using baking soda especially, not to marinade more than an hour......usually you only need 30 minutes or so . Hope that helped.
