    🥕 Ingredients:
    Making Dashi (if using instant dashi, skip these ingredients)
    5 g dried sardines - (niboshi)
    500 ml water
    5 g dried kelp - (kombu)
    5 g bonito flakes - (katsuobushi)
    Marinating the beef and onions
    150 g beef - any cut, thinly sliced
    1 tbsp soy sauce
    1 tbsp mirin
    1 tsp oyster sauce
    ½ tsp light brown sugar
    ½ tsp grated ginger - or ginger paste
    50 ml water
    ¼ yellow onion
    ½ tsp salt
    Niku Udon Broth
    500 ml dashi stock - (from step 1) or instant dashi
    1 tbsp soy sauce
    1 tbsp mirin
    1 tsp light brown sugar
    Cooking / Serving
    1 tsp beef fat - or cooking oil
    2 portions udon noodles - cooked
    finely chopped green onion - to garnish
    Japanese chili powder - (shichimi togarashi) optional

    Q: WHAT IS THE DIFFERENCE BETWEEN RAMEN AND UDON?
    A: Ramen and udon are types of noodles used in Japanese cuisine. Ramen noodles are thin, springy, and served in rich, salty ramen soups. On the other hand, udon is thick and chewy, usually served in light and delicate dashi broths. (Although there are exceptions such as curry udon or miso udon.)
    Q: WHAT ARE UDON NOODLES MADE OF?
    A: Udon noodles are made with wheat flour, water, and salt.
    Q: WHAT IS NIKU UDON?
    A: Niku udon is a hot, soupy dish made with udon noodles and topped with thinly sliced, seasoned beef or pork.

    I'm in the US, this is my first time making udon and I just followed your recipe, I don't know what kind of soy sauce you used so I used less sodium soy sauce from lee kum kee, the broth I made from kombu and bonito flakes, you know, I tried to make it as similar to the video as possible, and my husband and 2 children ate the entire bowl of udon, I just want to say thank you very much for the very easy to understand video❤

    What's the difference between soy sauce and shoyu? Is the same thing ?

      They essentially mean the same thing, but soy sauce is just a general name so it can be Japanese or other types like Chinese soy sauce. Shoyu specifically means Japanese soy sauce.
