That tip about mixing the sauce with the noodles! Genius! I always had stuck noodles in my wok, I was taught to add the sauce last and to the edges of the wok but it never worked right. Thanks!
My nieces came over and wanted Udon. After our hike, I was tiered and needed to make something easy and fast. I had some meat in the freezer that I cooked up in lots of garlic when I bought a package that was too big. Because we had most of the other ingredients, I could make something based on this. I had it chopped cooked and served in less than 20 minutes and it was definitely better than takeout. Soaking the noodles is GENIUS! The warmth from the black pepper and extra ginger gave us that happy belly feeling. Thanks so much!
I made these with cabbage in place of other vegetables and they turned out awesome. I was using filet, so I didn’t use baking soda since filet is already very tender and I’m sensitive to the flavor of baking soda. I also added a little sugar to the beef marinade.
Me and my husband cooked this recipe today. It was sooooo good! Even our very picky five-year old liked it! We didn’t have fish sauce and we tossed in some broccoli in the mix, but as the old saying goes: use what you have. Thank you for this recipe!

You are like me when cooking stir-fries for my family, and friends. I can't resist adding that pinch of baking soda. Sometimes I also add a bit of egg white and "velvet" the proteins. I love stir-fried noodles.
@@desertchild17 It breaks down the connective tissues in the proteins and makes it less hard to chew. It's a way Chinese take-outs, and restaurants use to make cheaper cuts of meat more tender. Ever had that silky soft beef at a Chinese place? Baking soda it is.
For those who don't like or have access to udon noodles, you can use any kinds, really. There's the dry noodles from Hong Kong that specifically is used for stir fry noodles, and those are the thin ones you see at your typical Chinese restaurants. They steam them first and don't boil it, and then they stir fry in a wok with high heat. If you steam them only and don't boil, they don't have moisture and it's more suitable for stir fry. Those are even better in my opinion because they're specifically made for stir fry.
I made this tonight and it was delicious!! My husband gave it a 10. It was a little too peppery for my taste, so next time I will add less. Thanks for your recipes and videos! I can't wait to try some more.

I find that Udon noodles are great to use in soup due to there thickness. I also have them on hand as they can still be used in so many ways. Enjoy your lunch!
are Udon noodles dry or in refrigerated section? Can't seem to find an answer to this . Looks as if they are pre-cooked in packages and then you re-hydrated them. I am confused!

You should not need the baking powder when using an acid. Bicarbonate just turns into Carbon Dioxide. Just use the Acid, which will tenderise the Beef by itself. The taste is amazing, another Better Than Takeout recipe. Thank you

Soaking the udon noodles in the sauce prior to stir frying is brilliant! I will definitely be making this recipe in the near future.
