    😀 My Dad used to make what he called Leather Souse! made with cow hide. Everyone loved it, we used to sell it at local cricket matches.

    Can I just used the water from the boiled chicken foot to finish preparing the souse since chicken foot is rich in collagen it means we are throwing out the good stuff?

      No not the water you pre boil the chicken in

      You can boil it for a bit then pour out that water, add more and then you can use a bit of that water in the spouse (not all of it).

    You could boil water and put your meat in for about minutes then pour that off. That gets rid of the film and the nasty stuff. So now when you boil your meat, you can use the broth for soup.

    Mix chicken foot and pig foot you get best souse that the way they make it at BUXTON in GUYANA

    My mom makes Chinese style pickle feet, it’s very similar but we use vinegar.

      A lot if not the majority of Trinidad cuisine is Asian inspired. So a lot of our foods are similar in taste , process and seasonings

      There are countless numbers of diners who became ill (some fatally) by consuming food prepared by cooks with short nails...but very poor hygiene, Remember that...🤔

    Souse is delicious, but I have never heard chicken foot with souse. You young people has switch up all the dishes in the Caribbean, you need to call it another name. Souse is usually made with cow face, ears, nose and snouts likewise with pig head, face, ears, nose etc, but never have I heard about chicken feet. Chicken feet is for making dog food.

      Perhaps where you are from or in your family you don't eat chicken foot souse. Remember that the Caribbean is made up of many countries. I am decades old and I have never heard of anyone eating the parts of meat that you mentioned but I would not assume that they should not be eaten simply because I don't. I do know about cow heel, pig foot and chicken foot souse. We also eat chicken feet normally just as we eat other parts of the chicken; it is certainly not dog food for us.
      Of all of the cooking shows from different cultures on TH-cam that I watch, the only ones that I see people consistently criticise and drag down each are on Caribbean cooking shows. Why do we always have to tear down ourselves? Why can't we just learn that maybe different countries have different foods or prepare foods differently?
