The only thing I can think of, but I don't know if it counts, is all different kinds of supports, for example the supports of a wooden coaster look different with path underneath, and the supports of chairlifts sometimes make weird angles when they're directly above something. But maybe you already thought of that.

I'd rather they do keep walking while eating/drinking. The urge to sit down while holding food or drink overrides all else, including the need to use the restroom. The consequent full bathroom stat results in them getting angry and lowering the park rating. They also tend to get bored while sitting. I've nearly failed several scenarios in the past because of these factors.

I started on my beautiful food court, with everything the guests could possibly want, in a big mall style building with multiple floors. Once the actual rides building time came, it was only a few rides before I hit the limit. Thankfully openRCT removes that! I'll have to try it again.

You need an Xbox emulator made entirely out of very carefully timed rollercoasters that can technically run the Xbox version of RCT

only thing I can think of that's maybe not in the park is all guest clothing combinations and all guest weights, but I don't know how you would even make sure that's in there, and also those aren't really attractions. if you're not building a human zoo anyways.

I have a question. How do you define "everything"?
1.: Every single type of object you can create/build?
Or 2.: everything you can select in a menu and build?
If you define it as the latter then I guess you have to add all the pre saved roller coaster designes. But I get why that would feel like an overkill and pretty redundant since you already have every single Rollercoaster type in the park (like the first definition).

Does the scenario have tiles of each of the varying land ownerships and construction rights? Or a highway dividing the park? I don’t know if those count, but maybe they could be added. Fantastic scenario!
