Vegan Deli Ham | Gluten Free

- Vegan Deli Ham
Ingredients:
-225g mushrooms
-1 cup cooked rice
-1 1/2 cups plant based milk
-5 tbsps Gluten Free cornflour
-250g firm tofu
-2tbsps Agar Agar powder
-1/2 tsp garlic powder
-1/2 tsp onion flakes
-Salt to taste (I used near to 1 1/2 tsps)
-1/2 tsp ground black pepper
-1 tsp paprika
-1 tsp liquid smoke
-2 1/2 tsps beetroot powder
-2 tbsps olive oil
Method:
-Cook mushrooms with olive oil in a pan until soft
-Mix a small amount of the plant based milk with the agar agar and set aside for later
-To a blender add the mushrooms, cooked rice, tofu, cornflour, paprika, garlic powder, onion flakes, ground black pepper, salt, beetroot powder, liquid smoke and the remaining plant based milk without agar agar and blend on highest setting until completely smooth
-to a pan add the mixture and heat over a medium heat
-When lumps have disappeared and mixture is hot and smooth add the plant based milk with the agar agar
-Stir continuously, mixing with a folding motion for a minimum of 10 mins
-Once cooked, pour the mixture into suitable containers and set aside to cool
-When completely cool turn the ham out onto a plate and put into fridge and leave overnight without covering
-Depending on the size of your hams, they may need to be left for more time so that they dehydrate enough to cut easily.

This looks amazing. As a Celiac I can really appreciate that this is GF (Thank You! 🙏) because there are NO GF Vegan Deli slices in the states. But there are plenty with gluten!

I am no longer vegan(was an intermittent 6 +years at one stage and cycles veggo various including meat and then dotted with vegan too) I change my diet and cycle it Incorporating most things
I find your channel refreshing for times I like to do full veg. and sometimes vegan options
What a new version which has no vital wheat gluten which can cause auto-immune dis-ease, aswell as some antinutrients I changed diet again and rinse any grains (Organic) and soak firstly . . . (some seeds too but not so fussy there) as long as not sprayed produce..

Chickpeas is a definite possibility. We’ve not been making many videos recently due to having moved to southern Spain, but we have developed a wonderful alternative recipe (using lentils) which we’ve been using for over 2 years now. These days, the lentil recipe is the only one we use as the ingredients are so easy to source and super cheap. It’s fully tried and tested and we fully intend to post a video showing how to make it.
We are currently working on setting up a studio set up to create more content.

Finally a UK lad, all the Americans use strange ingredients, where did you get liquid smoke I've literally looke every where for it?
We bought ours from our local health shop. We don’t live in a city, but they stock it in the health shop in the town near to us. You can buy it online in the U.K. but most places require orders of a certain size to qualify for free delivery. This place looks good.

This looks delicious! I cannot find tofu where I live so I wonder if it works using homemade tofu (more of a crumbly texture)?

Hi! Thanks for sharing this recipe. I just have a question about the beetroot powder. Can I remove it? We don’t have that in my country. Or is there any substitution? Hope you can help me. xoxo
The beetroot powder is not essential, it does add some good nutritional value, but you could experiment with other natural colours if you wanted it to look a certain way. Turmeric would make a very striking colour and would add very good nutritional value for example. But if you just wanted to omit the beetroot powder, the recipe should work well. 😀🌱💚

I'm Alkaline, love your recipe and been wanting "deli meat." Using chickpea tofu instead of the soy tofu and wild rice instead of the white rice or I can even use quiona. What you think?
@Shanaya Germain, we have little experience of using the ingredients that you mention, in a recipe such as the one in this video. Maybe you could experiment with the different ingredient replacements and let us know! The rice is used in this recipe because of its starchy nature, I’m not sure that the wild rice will be sufficient as a replacement, but I’m sure that there are replacements available. We do have another recipe for a ham replacement, it’s just not filmed yet. The ingredients for this new recipe are mainly tomatoes and red lentils. I’m not sure if this is suitable for your alkaline diet?
Instead of agar agar you can use sea moss gel.
Can I use corn powder instead of agar agar since they both get thicker under heat and firm up when cold...?

Yes, I do have another recipe that I want to make, but I just haven’t had the time due to having to work in another job and the arrival of a beautiful baby! The recipe uses lentils and tomatoes. I personally prefer the texture and flavour of the new one I want to make the video tutorial about, hopefully, very soon, I will have some success which allows me to invest a lot more time in making lots and lots of new recipes and videos😊🙏💚🌱😋. Keep a close eye on this space and hopefully, very soon, it will grow into what I originally envisaged it to be. 💚💚💚💚
Agar Agar,what s the substitute: is it gum arabic?. and tofu is it soya beans: and firm means not soaked?: it s used soaked and getting rid of water then added to meat to make burger: sorry too many questions: i wish to make it: last one -1 tsp liquid smoke

Agar Agar is seaweed(in this case powdered form), tofu is generally made from soya beans and the firm one has less water and a firmer texture and liquid smoke is a smokey flavoured liquid which is used to add a unique flavour(be careful about which brand you choose, some are full of nasty chemicals, others are not). Carrageenan is the other option. It’s another species of seaweed but the manufacturing process part of it is not so healthy. Instead of liquid smoke, there are quite a few homemade versions that are easy to make at home(another video I think!). I have a video in the mix as now my circumstances allow me to focus more on sharing my ideas😊. There is an easier version of vegan ham that does not require Agar Agar or carrageenan, I’m on it!!! This new version is different and super easy to make. If you find other substitutes for Agar Agar, I would love to know. Thank you 😊 and let me know how you get on with making these recipes😊🌱💚😋

Quick question, is this able to be warmed up. Or does it have to stay cold or at room temperature?
Hi, you can heat it, but it wouldn’t really work if you heat it slowly. We quickly fry it in a hot pan with a little oil, then onto a slice of bread or chopped up in salad for example. It is very nice when done this way, but do make sure not to heat it for any length of time as it will go very soft. We will be making another video at some point with a brilliant recipe for an alternative version that will withstand much more heating, it’s a tried and tested recipe that we have developed over time. Also it’s much easier to make! 🌱😋💚✨

I made it with tomato paste instead of red beet, fried it until it became crunchy. Delish! A very great gluten free vegan "meat".
That sounds great! I love that you changed the recipe and tweaked it to suit😋. We have another recipe for vegan ‘ham’, it’s much more simple and quicker/easier to make (it uses Passata paste!).
