Keto Vanilla Sponge Cake Recipe with Strawberries and Whipped Cream

  • Got inspired for this recipe when I went strawberry picking. Those strawberries were so delicious layered in between soft vanilla sponge cake and whipped cream. I wanted a light, soft, sweet layer cake so I went back to the pastry days and used a recipe we use to make all the time and figured it out from using my keto vanilla cake recipe and just making a few tweaks according to the recipe I looked up.

    Vanilla Sponge Cake Ingredients
    8 Eggs Separated
    1/2 tsp. Cream of Tarter
    240 g/ 2-1/2 Cups Isopure Vanilla Whey Protein Isolate (or unflavored)
    150 g/ 1-1/4 Cups Coconut Flour
    180 g/ 1-1/2 Cups Powdered alternative sweetener (I use monkfruit/erythritol blend)
    1 tsp. Baking Soda
    2 tsp. Baking Powder
    2 tsp. Xanthan Gum
    1/2 tsp. Salt
    5 oz./1/2 Cup+2 Tbs. Neutral Oil
    12 oz./ 1-1/2 Cup Water
    2 Tbs. Vanilla Extract
    1 Tbs. Vanilla Stevia (or 1 tsp. Vanilla extract + 2 tsp. regular liquid stevia) if using unflavored whey protein
    Cake Macros:
    80 Calories
    5 g Fat
    7 g Total Carbs
    1 g Fiber
    5 g Sugar Alcohol
    1 g Net Carb
    7 g Protein
    Stable Keto Whipped Cream and strawberry simple syrup
    (for the large layer cake this is the amount I needed)
    48 oz. /6 Cups Heavy Cream
    120-200g 1-1-1/2 Cups Powdered Sweetener (to taste)
    4 1/2 Tbs. Cold Water
    4 1/2 tsp. Gelatin
    2 Tbs. Vanilla Extract (any flavor you want, to taste)
    1-2 lbs. Strawberries or any fruit
    Equal parts Allulose and water to make a simple syrup (however much you need, I used about 1 1/2 Cups each for my cake)
    Macros with 1 1/2 Lbs. of strawberries and 6 Cups of whipped cream, cut into 40 pieces
    210 Calories
    18 g Fat
    12 g Total Carbs
    2 g Fiber
    8 g Sugar Alcohol
    2 g Net Carbs
    8 g Protein

    I love the way you explain why you use certain ingredients and the effects of different ingredients. I never have questions at the end of your recipes. Plus I love that you don’t use almond flour since I am allergic to tree nuts but not coconut. I’m surprised you don’t have a million followers. Do you have a cook book with your Keto recipes?

    So interesting about the flavored Isopure resulting in a lighter cake! I will have to try that. Also, thanks for the demo on stabilizing the whipped cream with gelatin.     It looks so amazing. I'm in Queensland and I love a good sponge cake. I just love pavlova. That and lamington. It's a sponge cake cut into little squares and dipped into a runny chocolate icing and then rolled in coconut, which I just realised I could make that with your sponge.

    I have always been a pie person because I can make a perfect pie crust and my cakes never look perfect. Back when I aas baking cakes, I used a simple syrup to brush over the exterior while it was warm. Then, old age and old brain happened. Went to bake a cake shortly before keto and could not for the life of me remember the ratio for a simple syrup to cover a 9x13 cake. Can't wait to try this one.

      You're welcome! I refrigerate until solid then wrap on a platter. Or portion it into slices and Tupperware it to take it to different parties. Or you can portion and freeze it.

    I love all the detail you go through and explanation on why you are doing something or ingredient selection. Trying to figure out an Opera torte which is traditionally almond flour sponge with bit of traditional flour, but really haven’t found a keto version. Have you tried converting traditional recipe to keto?

      I have taken a few traditional recipes out of my College Pastry and Baking Textbook. I never enjoyed too many of the traditional cakes thought. They always seemed dry to me. But I remember making the Opera Torte but that's about it, lol. I could look into it but I usually don't use almond flour just because it is easy to cross contaminate and I have an allergy in the family.

    Wonderful as always and always such vast knowledge. In general what stops coconut baked goods from having a grainy texture? Does xanthan or psyllium help?

      I think it's how fine they can grind it plus you only need 1/3 of the amount of coconut flour in place of what you would need if using almond so that adds a lot of almond flour to the recipe. The xanthan gives structure to the keto baked goods.

    Looks amazing! Question - I am halfway through the video so I don't know if you mention this, but can this sponge cake base be used as "lady fingers" when making keto tiramisu? If not, any other recipe you have that would work? Maybe you have a tiramisu video I just need to find! Thank you!

    I am wondering why you don’t use now brand ( what I use instant dissolve ) no blooming required or is the blooming a different thing for the recipe ? Just wondering

    I live in New Zealand. We don’t have allulose in the country what would you use instead. We have erythritol, monk fruit and stevia. I have found erythritol gives the best sweetness but have been told it will dry cakes out. What would you use for cakes?

      The allulose is only to make the strawberry simple syrup. Erythritol crystalizes when it cools. So I would say just do water, strawberries and a little stevia until it's as sweet as you like it. For the cake I use a monkfruit/erythritol blend and it works great.

      I never put coconut in a cake batter. I would just use a coconut extract then add some coconut flakes to the cream.

    in the written recipe you have listed cream of tartar as one of the dry ingredients. But the written recipe doesn’t say when this is supposed to be added, it only says measure sift and whisk all dry ingredients except cream of tartar When do you add the cream of tartar ? Or can you omit the cream of tartar altogether?

      You whip the egg whites with the cream of tarter.

      For the cake? There are two thing allulose does in baked goods, makes baked goods really soft and brown very quickly and its less sweet. So that being said, I'd say it would only work in a sheet pan because in a thicker layer it would burn before cooked all the way through. And it may be very soft and hard to get out of the pan without breaking. Had that problem on a few baked goods I've made. But you can try it.

      It's been on my list for awhile. I have a puff pastry recipe, I just need to perfect my custard recipe I've been working on for awhile.

      You can try something different like a plant based protein, I haven't experimented with much else though.

      It's my kitchen, not a studio and my kitchen is my taste, I'm here to help bring you the best keto desserts possible. I already take so much time testing, setting up, breaking down lighting, cameras, microphones, then shooting, editing, writing not to mention cleaning sinks full of dishes plus trying to get my own bakery off the ground, making barely any money at all.

      Keep doing what you're doing and ignore comments like the one above. Some people only have the attention span for Tic Tok videos. I prefer to learn techniques from a professional which take longer than a minute.
