Your mad kitchen science skills really show through on a video like this one Beautiful Lady!! Thank You for all Your extensive hard work to educate & equip everyone. YOU ROCK ALYCIA!!😍
This was such an interesting video Alycia. Thankyou for the science behind the stabilisation and the uses for the stabilised cream. I have used your gelatine whipped cream on cakes and it is a game changer…….. I’ve also made your condensed milk ice cream…….. never thought of using it just as a cream though, so great info. 👍🏻🤩🥰
I've always wondered why the whipped topping I buy for my coffee melts almost immediately but the one on my coffee at Starbucks last forever. Not Keto but something I have wondered about.
I have had good results from Daiya cream cheese. So Delicious CoCoWhip topping for a quick grab & go whipped topping is good. I whip my own topping from a good canned coconut milk like Organic Thai Kitchen or Aroyo D & use the gelatin way to stabilize; though in fairness I have never tried the sweetened condensed milk way. 😊 Hope You find what can work for You. It is not easy to be dairy free in the ketovore world but it is a LOT healthier, keeps the weight down & lower inflammation for LOTS of us!! Happy Trails 😍
It looks so good. I'll have to try the cream cheese variation. Is it like a cream cheese fluff? I'm guessing probably not - just curious. Have a beautiful day. ❤
What a wonderfully informative video! Thank you so much ❤ I always learn so much from you. I really appreciate the freezing tip for Keto Sweetened Condensed Milk, I was afraid it might crystallize ... I learned to mix it with Mayo and a little keto honey for honey walnut shrimp from the keto twins - so, so, good but I have way too much of the milk and now you've taught me how to use it in whipped cream, ice cream and how to freeze it. Also made your pie crust recently - perfection! You are my go-to sweet chef for my treats for my diabetic hubby. 🤗💯🙏
Wow super informative video! I was wondering if I could use your no churn ice cream recipe as a whip cream topping - now I know! lol. Thanks for all your hard work! ❤
You're the best, Alycia! This is a dream come true! Can't wait to make it. Wondering tho, i think you used erythritol in the first two but allulose in the 3rd one. Can you use allulose instead in the first two?? Thanks so much and keep rockin' it!!❤
Aww thanks. When you don't cook the allulose down, like in a sweetened condensed milk, it draws out moisture from whatever you use it in. So I would be afraid the whipped cream would get soft and weepy after awhile. The gelatin version may combat that but I'm not positive.
I don't know, I've never tried that. But the allulose caramelizes a little in the condensed milk, so wonder if you have to cook the allulose a little bit to make it thick first.
You would hate my line of work then, I waste so many ingredients testing and creating recipes for you guys. And you must not watch many of my videos because I'm a stickler for that when it matters and counts in macros and baking recipes. I reused the same measuring cup for all of it so at the end it was maybe a quarter ounce and I'm not gonna be able to even eat all the recipes before they are bad.
Between blending any sugar to make it powdered and now that WARM cream whips better, I’m always learning new sweets facts here 🙂🙂
Glad I can help you learn something new every time, lol!
Thank you. They all look delicious

I have to limit my dairy and have been searching for a recipe to make cream cheese from coconut milk/cream.
You're welcome. They have vegan whipped cream now by silk and there is vegan cream cheese.

You're welcome, I will try!
Can I just use liquid allulose instead of keto sweetened condensed milk?
I don't know, I've never tried that. But the allulose caramelizes a little in the condensed milk, so wonder if you have to cook the allulose a little bit to make it thick first.

I wish you would scrape out all the cream in the jug into the mixer, it is such a waste of food and not a true measurement otherwise
