Garlic Butter and Cheese Stuffed Chicken (Baked) - Chicken Kiev

  • Juicy and cheesy inside and crispy on the outside, this chicken Kiev is sure to become a family favourite!
    Recipe: Garlic Butter and Cheese Stuffed Chicken (Baked) - Chicken Kiev
    Ingredients:
    2 chicken breasts, 423g (14.9 oz)
    80g (⅔ cup) of all-purpose/plain flour
    100g (3 ¼ cups) of corn flakes
    80g (5 ½ tablespoons) of soften unsalted butter
    55g (⅔ cup) of grated cheddar cheese
    1 to 2 garlic cloves, grated
    1 tablespoon of dill, finely chopped
    2 tablespoons of parsley, finely chopped
    1 teaspoon of lemon juice
    ⅛ teaspoon of black pepper
    ½ teaspoon of salt
    2 large eggs
    Instructions:
    1. In a bowl, add butter, garlic, dill, parsley, and cheese. Mix until combined. Add ½ teaspoon of salt, ⅛ teaspoon of black pepper and lemon juice. Mix.
    2. Place the garlic butter on a piece of plastic wrap. Shape it into a 16cm (6.3’’) long log. Freeze for 2 hours.
    3. Put the cornflakes in a zip lock bag and pound the corn flakes to fine crumbs.
    4. Several minutes before the garlic butter is ready, preheat the oven to 230 °C / 210 °C fan / 450F / Gas mark 8.
    5. Butterfly cut the chicken breasts. Line the cutting board with plastic wrap. Place the chicken breasts on top and cover with another piece of plastic wrap. Use a meat mallet to pound the chicken breasts flat. Remove the top plastic wrap and season the chicken with salt and pepper to taste.
    6. Cut the frozen garlic butter in half and place 1 piece of garlic butter in the centre of each chicken breast. Roll each chicken breast tightly to close and use toothpicks to seal.
    7. Beat 2 large eggs. Put the flour on a plate and spread it out. Transfer the cornflakes crumbs to a bowl.
    8. Working one at a time, coat the stuffed chicken with flour, dip in eggs then coat with the corn flakes crumbs.
    9. Line a baking tray with parchment paper and spray with olive oil. Place the chicken on the prepared tray. Spray the chicken with olive oil. Bake for 20 to 25 minutes.
    10. Place the stuffed chicken on a cooling rack and remove the toothpicks. Serve with a salad or your favourite sides. Enjoy!
    Notes/Tips:
    - The crispy stuffed chicken can last in the fridge in an airtight container for 3 to 4 days.
    - Serve the chicken with green salad, mash potato or any sides of your liking.
