    KETO SUGAR COOKIES RECIPES
    MAKES: 24 COOKIES
    1 3/4 cup almond flour
    1/3 cup coconut flour
    1 teaspoon baking soda
    1 teaspoon cream of tartar
    1/2 teaspoon salt
    1 cup unsalted butter, softened to room temperature
    2/3 cup powdered erythritol
    2 teaspoons vanilla extract
    1/4 teaspoon almond extract (optional)
    1 egg
    ROYAL ICING:
    1 1/4 cup powdered erythritol
    3 large egg whites
    1/2 teaspoon cream of tartar
    pinch of salt
    1️⃣ 01:05 - Sift together almond flour, coconut flour, baking soda, cream of tartar and salt.
    2️⃣ 03:29 - In large bowl, cream together the butter and powdered erythritol until fluffy (about 2 minutes). Beat in vanilla and almond extract if using. Then beat in eggs.
    3️⃣ 05:35 - Add flour mixture and beat until just combined. Place dough into between two pieces of parchment paper. Refrigerate for at least 2 hours. May store in freezer for later use too.
    4️⃣ 08:43 - Keeping the dough between the parchment paper. Using a rolling pin, roll out dough to about 1/8 to 1/4 inch thickness between the two sheets of parchment paper. Refrigerate for additional 20 minutes.
    5️⃣ 11:00 - Remove the top piece of parchment paper and cut out shapes. Place on a parchment lined baking tray.
    6️⃣ 11:57 - Bake until starting to get golden brown around the edges, about 8-9 minutes. Remove from the oven, let cool on baking tray for 5 minutes before transferring to a wire rack.
    7️⃣ 14:25 - To make keto royal icing, combine 1 cup powdered erythritol, egg whites, cream of tartar, and salt in a small bowl. Whisk until smooth. Remove 1/3 of the icing into a smaller bowl and add remaining 1/4 cup powdered erythritol. Whisk until slightly thicker than original icing mixture. Use the first batch of icing to flood the inside of the cookies with icing and the second thicker batch to outline the cookie. Add icing batches to two separate piping bags. Using the thicker icing, pipe the borders of your cutout cookie. Then using the thinner icing, flood the inside of the outline.

    *1 3/4 cup almond flour*
    *1/3 cup coconut flour*
    *1 tsp cream of tartar*
    *1 tsp baking soda*
    *1/2 tsp salt*
    Sort out through sieve
    *1 cup softened and unsalted butter*
    *2/3 cup powder sweetener*
    - Mix
    - Add *2 tsp of vanilla extract*
    - Add *1 egg*
    - Mix till smooth, creamy and fluffy
    - Slowly mix dry ing. into the mixture
    - Let cool in refrigerator for 1 hour
    - Roll
    - Cut out cookies
    - Bake 325 ° for 8-9 minutes
    - Let cool
    *3 egg whites*
    *1 cup powder sweetener*
    *1/2 tsp cream of tartar*
    *pinch of salt*
    - Mix together

    I work in a bakery. Little tip I got from a veteran baker was this. Soda spreads, powder rises. These look great! Looking forward to trying them. Also just a suggestion, because at this moment, I don’t know the nutritional facts, but maybe egg white powder/meringue powder instead of raw egg whites. It will keep, so nice to have on hand.       Quick question, tho:
      How hard does this icing get since the erythritol tends to make things too hard? If it's too hard, would adding some Allulose help?

    Actually the Cream of Tartar is nutritionally beneficial, due to adding potassium which is well needed when doing Keto

      Potassium isn’t “nutritional” because you can’t metabolize it. It’s just a necessary ion for biological systems

    Beautiful dah-ling! Love that you outline them too =) I'd not considered sugar cookies yet this year, so thanks for the post!
    *Side note; Humans have been eating raw egg forever, & it's actually no more dangerous than eating eggs over easy, poached, soft scrambled etc. ~ which is truly not dangerous at all, for most people, & do contain semi-raw egg. Those who are sensitive usually know they are sensitive, thus avoiding foods they are sensitive to.
    I have to say that it's disheartening to know that some feel the need to nitpick content creators who are, oh, I don't know....making cookies?! For goodness sake, think about this people- please!
    "Think before you stink" it up~ with unnecessary derogatory comments ~ which is how my children were taught to consider their motivations before they blew up the room with nonsense or hurtful words. Besides, who wants to mess with the amazing smell of fresh-baked cookies anyhow, right? =)

      Completely agree! For context, the main risk with eating raw eggs is Salmonella. This is largely caused by poor welfare standards and overcrowding on farms. If you can afford to source eggs from free-range or high welfare farms in the US/Canada, or if you live in countries where factory farming is discouraged, then Salmonella is much less of an issue.
      This is a great recipe, and if someone is in a position to use raw eggs, they shouldn’t have to give a big explainer just to avoid a pile-on of internet rage!

    Real sugar in royal icing helps stop bacterial growth which is why it helps preserve food such as in some non-keto jam recipes. Using non-sugar sweeteners does not have this benefit in royal icing so I would not keep the raw egg white royal icing at room temperature. If you used egg white powder and water it would be better, but I'd still keep it in the fridge.

    Here's a 50s memory for you... the Helm's Man would pull up in our alley and honk his special sounding horn. The whole neighborhood would recognize that sound!! Kids would start bargaining with their mamas... as we gathered at the rear of the Helm's truck 🚛.... The Helm's Man would open the back doors and ask what we wanted. I would call out, "Cookies!". But the neighbor lady was ahead of me, and she said, "Donuts." The man yanked a handle, and slid out a wide and narrow drawer... FULL of donuts wafting a delicious scent of yeasty dough and chocolate frosting... and other tempting flavors.... I was only five with all the purchasing power of a nickel... But finally, the cookie drawer opened... And there was my FAVORITE... the Helm's SUGAR COOKIES -- stacked in rows of thick, sparkly- sugared circles with their heavenly smell, redolent with lemony vanilla... !! I gladly traded my nickel!! ✋😃

    Love your recipes. In the future, could you also include ingredients in grams? I find better consistency in my baking when everything is weighed rather than measuring in cups, oz., etc.

    The cookies definitely need to cool significantly before putting any icing on them, maybe even overnight. I wasn’t a fan of this icing. I was looking for a thicker one probably made with cream cheese. Next time I’ll use the cookie recipe but another icing recipe. Mine soaked within the cookies and they’re not too pretty. They taste okay. I think if the icing would have been thicker these would taste much better IMO. I had fun making them 😁

    When you get to where the dough is ready for rolling and cutting, can the dough, instead, be rolled into a log, wrapped in Saran Wrap and placed in the freezer?

    Hi Annie 🤗 with royal and buttercream icing, I use Wilton’s Meringue Powder. I’ve never checked the nutritional info, and don’t have on hand. It’s been a long time since I’ve done cakes and cookies at home. Just a suggestion if you felt like looking into it. Hoping I have the energy and time to try these out for Christmas this year. It’s always, I really really want to, but don’t… love and hugs

      I don't have my Wilton's Meringue Powder in front of me, but the carbs are high. I looked last week.
      Definitely egg whites or egg white powder would be much more in line with Keto macros.

    If you use carton egg whites only (egg beaters, etc.) the whites are pasteurized and safer to consume "raw", or use meringue powder and use added water as directed on package.

      Anything pasteurized takes all nutrients out and then artificially reinforced. Never use fake goods eggs are the best perfect food. Eggbeaters are fake.

      I've found that making a "flax egg" (1 tbsp ground flax seed, 3 tbsp water, let it sit in the fridge to thicken for 15-20 minutes) works as an egg substitute in basically any recipe! Maybe that could work? 🤷🏻‍♀️

    If you don't want shapes, can we just roll it into a tube shape before putting in the fridge and then slicing that up??

      You could roll a bunch of little balls with the dough, put the balls on the cooking paper, then flatten them down with the palm of your hand. You wouldn't need to put the dough in the fridge if you do this because there is no cutting required. If you want the cookies to have a chewy texture, you could mix a tablespoon of gelatine into the almond flour before it gets added to the wet ingredients.

    I was wondering, can you substitute the almond flour for coconut flour? I have a severe allergy to nuts. I have tried coconut flour with recipes, but the coconut flour seems to make food items heavier.

      Use 1/4 coconut flour when it calls for almond flour as it sucks up so much more of the wet ingredients.

      This royal icing will the garden as it dries but it won’t be rock hard. It’s like the icing you see on the fancy painted cookies

    Idk what I did wrong but my dough was super soft 😞. So soft that refrigeration didn’t help at all 😢

      I’m sorry the dough turned out soft. It sounds like something went wrong because butter should turn the dough hard when refrigerated. Did you use margarine instead perhaps?

    Didn’t work for me. I let cool for 15 mins & they broke apart. More like cake than cookies. I will try again maybe

      Well because we eat Keto so that means no wheat flour or any other high carb flour.. Almond flour and coconut flour work well as a low carb wheat flour substitute..

      Indigo Nili has a cookie recipe (not a sugar cookie) that doesn't use almond flour. Check out her chan. But, yeah. Tam B is right. There are few options for Keto, so we have to become chemists. Wheat product of any kind is most likely to have unwanted carbohydrates. Gluten is an exception, but many people can't tolerate it. So, you have to do some work to find alternatives.
