    Very wholesome! Just a minor correction: The stone counter would technically heat up the dough faster, than a wooden one for instance. Stone "feels" cold, because it's able to conduct heat away from your warm hand (or heat into the cold dough) a lot faster, but in reality, it's just as warm as it is indoors.

Only changes I made were that I did cream the butter and sugar a bit more than he did, I added a 1/2tsp of cream of tartar, and I did a royal icing instead of a glaze. But even the cookies with just sprinkles and no royal icing were awesome. Best tip he gives here is to not over-bake them, that is so crucial with sugar cookies!

    Quick tip, if the bottoms are cooking faster then the tops, which was always an issue for me when making cookies, put one or two layers of paper towel sheets under the parchment paper. Metal is far more thermally conductive then air, and baking sheets have a tendency to force the bottoms to cook significantly faster then the tops. The paper towel will add a little bit of insulation to help it cook more evenly. For sugar cookies I would probably just do a single layer. For bigger or more dense stuff I do two or three layers. And no the paper towel won't burst into flames. As long as you aren't baking at like 450 degrees it's not a problem.

      I’ve always made lemon glazes for things with my Nonna, and I second this. The juice of a lemon gives you plenty of glaze, and the resulting glaze has a delightful sweet and sour flavour. I was deeply disappointed when I had my first milk glaze. This way might be better for the lactose intolerant people in your life, too - many don’t have too much trouble with butter, but still encounter problems when they have milk.

    Hey Adam, I think you was wrong saying that "stone counter helps batter not to warm up too quickly", i guess you said it just because stone countertop feels cold to touch compared to the wooden one, but truth is that stone (as well as metal) feels colder just because it's more thermally conductive(even if it's the same temperature as wood), which means that it can give off or receive heat faster than wood. Countertop is colder than your hand, so it "sucks" heat out of your hand faster than wood, therefore feels colder. But in the case of cookie dough it's the opposite way! Countertop is warmer than chilled dough, so the stone countertop will give off heat to the dough faster than a wooden one, melting dough faster. I hope I am right and it makes sense 😅

I don't really have the patience for the decorating my wife and daughter like to do. But I sure do like eating them, and the actual dough and baking is easy. We also don't go anywhere near 18 minutes of baking.

    • @ichbinein123
      @ichbinein123 4 ปีที่แล้ว +7

      Correct. The stone counter is the same temperature as the air indoors, it just conducts heat (and 'cold' given the difference in temperature) a LOT faster than e.g. a wooden table. So unless the stone surface was somehow cooled to below ambient temperature, it would transfer its heat a lot faster to the cookie dough than if it was made on a less heat-conductive material.

    Love your videos! One thing always keeps me wondering… You say in several videos that if you want something to cool less (stay chilled for more time) then the stone works well. Depending on what you are comparing to, but I expect the effect to be reverse.
    Simply put it, we (humans) do not really feel temperature, we feel the loss or gain of heat. Your stone tabletop is the same temperature as your wooden counters, etc. It only feels cold because stone has larger thermal conductivity than, i.e. wood. Meaning that stone or metal tabletop will transfer heat more efficiently from/to the cookie dough.
    In fact, remembering your video about thawing meat, you suggest to just putting it on a metal sheet and it will thaw very fast at room temperature. Here (with the cookie dough), same principles apply: if your put it on a tabletop which has larger thermal conductivity (stone), the dough will get warmer FASTER. 😊 We get tricked by our senses a lot, so no judging, just wanted to correct you (I have to pretend to be smart, I’m a PhD after all :D).
    Season’s greetings!

    4:44 Stone would actually heat up the dough faster than a wood table. It feels cooler when you touch it because it is a better conductor of heat.

    Regardless of the bean, it is recommended you grind coarsely with a french press. If you like the taste when you grind fine then do that, but you will get lots more coffee silt that way.

    Thank you Adam, this has become my go-to for gifting cookies to friends and family, and they all love it! I’ve come back to your video since 2020 Christmas and honestly this cookie has become an eventful icon for holidays and celebrations haha. You might think I’d remembered all the procedures but no😂; I still need to watch this step by step just to be sure!

    "People used to have much bigger families, I cut this recipe in half, and it still made four dozen cookies."
    Please, you underestimate the ravenous hunger that is family gathered for Christmas, Grandma had the right idea when she shot for three digits.

    Also if you dust services a lot especially with sticky dough use rice flour. Powdered sugar can get very sticky and regular flour will develop gluten if it gets wet even a little bit.
