    Just made these 20 minutes ago and they are Fantastic. Everyone in my family loved it!!!! I used ground pork instead of diced ham. 10/10 :)

    My mother used to make me baked eggs with 3 pieces of sharp cheddar cheese. I can remember them as far back as kindergarden. I'm 57 years old, so that recipe has been with me for a while! Just an x-large egg and cheese. Will definitely give yours a try. They sure look good!

    I love making these! although I shred the potatoes myself. I add a small leafy salad on the side sometime to cut back the richness and just make a simple mustart vinegarette :3

    MMMM! We do Meatless Monday, so maybe not today -- but we also do breakfast for supper, so I could try these tomorrow night! My favorite omelette has mushrooms, onions and garlic sauteed and mixed with cream cheese and Parmesan.

    My favorite combination is cooked mushrooms (typically button, or baby portobello, but occasionally some variety of wild), red onion or shallot, the smallest amount of garlic, a small amount of spinach and basil, and topped with truffle and basil.

    Depends on the mood. But my all time favorite omlette combo is mushroom, spinach, and tomato with swiss cheese. . . with a healthy dose of garlic.

    Love the red peppers and red onion in there instead of the usual Denver. Nice job!

    This looks awesome! And a person could use whatever filling they so desired! I'm also thinking... I would make the cups in advance and fill/make a couple at a time. Single person meal planning... ;)

    I've made a breakfast quiche recipe using hash browns as the crust instead of pastry. Sooo goood! This is like the mini version!

      Teresa-Mae Paz I use the recipe from Food Network. Just got to foodnetwork.com. In the search window at the top of the page, type in: hash brown quiche. When the list of recipes pop up, click on the first one by Paula Deen. It's a very simple recipe. Basically you are just swapping out the pastry crust for hash browns. I buy the pre-shredded ones from the grocery store because they are drier and don't need to be strained of any liquid. If you choose to use frozen hash browns, you will need to strain them after they are thawed out because they will be quite wet. The egg filling portion of the recipe is very flexible in that you can add whatever vegetables or cheeses you like. I also use milk instead of heavy cream which is listed in the recipe.

      Frozen hash browns will have had the extra potato starch and moisture washed (rinsed) out of them and dried (if you're doing it from raw, use toweling to SQUEEZE extra moisture out of the grated potatoes first) before being frozen.

    Wish we had grated frozen potatoe in Australia, makes it so easy, great idea for those of us that are gluten free, instead of using bread, awesome will have to try these using fresh grated potatoe, squished and drained of course....😀

    i would make the hashbrown cups, keep it warm, fry upbacon and maybe some peppers n such, layer the bottoms with the peppers, have some warm scrambled eggs ready, put that in and then a nice cover of cheese grits to keep it warm, pop them out and garnish with the bacon...❤💙💚💛💜

    I'm a breakfast cup person. So great to make ahead and take on the road. My favorite omelette combo is avocado, tomato, spinach and feta! YUM!! Can I just box grate some potatoes? Would that work the same way? Oh and also you keep the oven on 475 for each swing thru the oven?

    Since I am allergic to anything pork and I can’t eat table pepper or bell peppers, I would put in onion, small amount of chopped baby spinach, diced mushrooms, cheese, and chopped chicken sausage, along with almost no salt.
