Funfetti Bundt Cake With White Chocolate Buttercream Frosting Recipe
Ingredients:
Bundt Cake:
3 cups all purpose flour
2 tsp baking powder
3/4 tsp salt
227g softened unsalted butter
250g block of cream cheese (room temperature)
2 cups granulated sugar
1 tbs vanilla extract
5 large eggs (room temperature)
1/2 cup full fat milk (room temperature)
1/3 cup vegetable oil
2/3 cup rainbow sprinkles/ jimmies (not nonpareils as they will bleed out)
Oil spray or extra butter for greasing the Bundt tin
Frosting:
227g softened unsalted butter
2 & 1/2 cups powdered sugar
1/4 tsp salt
2 tbs thickened cream
170g white chocolate
& different kinds of sprinkles for decorating. As many or little as you like
Method:
1. Pre heat fan forced oven to 160C
2. Add flour, baking powder & salt to a medium sized bowl
3. Use a fork to gently mix together until incorporated. Set aside
4. Add butter & cream cheese to a large mixing bowl
5. Use an electric mixer to mix on medium speed for 1 minute
6. Use a spatula to scrape down the sides of the bowl
7. Gradually add in the sugar mixing in between
8. Increase the speed to medium-high & mix for 3 minutes
9. Add vanilla extract
10. Mix until incorporated
11. Scrape down the sides of the bowl with your spatula
12. Add in 1 egg at a time mixing between each addition
13. Add the milk & oil
14. Mix on medium speed until incorporated
15. Scrape down the sides of the bowl
16. Add the flour
17. Use your electric mixer to slowly mix the flour into the batter. Only mix until you don’t see any more flour. You don’t want to over mix
18. Add the rainbow sprinkles/jimmies
19. Fold the sprinkles in using a spatula. Do not over mix
20. Grease a 10 inch Bundt tin
21. Fill 3/4 of the Bundt tin with batter
22. Bake for 1 hour or until an inserted skewer comes out clean
23. Let the cake cool in the tin for 10 minutes
24. If you happened to over fill your tin with batter like I did.. just use a serrated knife to trim the top off. If not then you can skip this step :)
25. Transfer the cake to a cooling rack
26. Let the cake cool for 1.5 hours before you start making the frosting
27. For the frosting melt your white chocolate in the microwave. Start with 20 seconds & then mix well. Then melt it in the microwave in 10 second intervals mixing well after every 10 seconds. You don’t want to burn the chocolate. Set aside
28. Add butter to a mixing bowl
29. Use an electric mixer to mix on low speed for 2 minutes
30. Use a sieve to sift in the powdered sugar
31. Mix on low speed until incorporated
32. Add salt & thickened cream
33. Mix for 1 minute
34. Scrape down the sides of the bowl using a spatula
35. Add in the melted chocolate
36. Mix on high speed for 2 minutes
37. Scrape down the sides of the bowl using spatula
38. Spread the frosting over the cake
39. Decorate with sprinkles. I used a few different kinds
40. You can now cut & serve the cake!
Store in an air tight container in the fridge
