Have you ever experienced the icing of the cake bulging out due to the butter cream. Or is there a way to prevent such a disaster from happening. For me this combination is a no no. Underneath the icing I always use ganache.
The air pockets happen to me when the cake is too chilled before I apply fondant on it. You should go round several times pressing the fondant down, and avoid cake being cold. You notice she flash freezers for 20 mins so the frosting is cold, not the cake as opposed to say leaving it in the fridge overnight to chill all through
Also at the baking school we were taught not to stack tall tiers of sponge cakes on top of each other even with supports as there is the danger of them collapsing. Does that worry you at all.
Not at all:) I have done it hundreds of times and have never had a problem. I wouldn't deliver it all stacked though. I don't like to transport more then 3 tiers pre stacked. I have a chilling method for traveling with tiers that makes it so much easier to fully assemble on site. I haven't really made a detailed tutorial on that yet though.
@@julietbram1689 if your cake school did not teach you dowelling, you need to ask for a refund. That's the way tall and double barrel cakes are made, it's actually just stacked cakes of the same height

I noticed you touch your cakes without messing them up. Do you keep them in the freezer. Beautiful cake
I do flash freeze for about 10 to 20 minutes so that the surface is firm, but the inside is not frozen:)

I used to have issues with it until I started using a very thick damning buttercream. I do like to use ganache also.

Are you asking about the broach mold? If so, I actually made that year's ago, but you can find quite a few on Amazon now:)

With dowels none of the cakes is actually putting ita weight on the one below.
