Hi Charlie, if I have several "turns" to can, I'll use the same water in the canner - unless a jar breaks or something. I have had that happen and had to clean everything up, but usually, I'll just reuse it, especially if it's the same item.

Hi Betty, I'm a sister in Christ and love your video! I'm a novice at canning with a few fears of not doing it properly. My Granny Smith apple tree had a bumper crop this year and I've been making all sorts of goodies from it. I researched canning apples yesterday, found your video, and made your recipe. I followed your recipe exactly. When the jars cooled, the juice settled and the apples at the top are above the juice. Will that be OK or do I need to reprocess them? Also, I made apple butter last week and I can see air bubbles in some of the jars. Will I need to throw those away? Thank you for your help sister! Lord Bless!
Mary, sorry I didn't reply right away. I teach Bible studies on Mondays and Tuesdays and am just now getting to e-mails and comments. Many times apples will rise to the top, and especially if they cook up sorta like apple sauce. If they are sealed, they should be fine. As for the apple butter, if you followed the canning time for that, it will be fine, too. You just can't hardly get all the air bubbles out of apple butter. If you haven't already, get you a copy of the Ball canning book. It will answer a lot of questions for you - but if I can help, don't hesitate to comment or e-mail me directly.
We just like eating the sliced apples. You can also make apple butter later, or apple sauce, or even use them to make pies, but you have to add your thickener.
Oops, now that I'm in the middle of 2 bushels of apples is probably not the best time to ask, what recipes do you use the canned slice apples for?, I'm doing applesauce and apple jelly. I am also going to try my hand at apple pie filling. Just not sure what to do with slices.

Once you waterbath the apples, they are shelf stable. Don't have to keep them in the fridge if they seal. Glad you liked the video!
