How to make my mum's traditional keema curry!

    Hello my inspired viewers I hope you are having a fantastic Holiday time!
    This recipe is something from my childhood that brings back some nostalgia for me so i hope you enjoy it too!
    Ingredients
    Serves 3-4
    2 bay leaves
    2 cardamom pods
    1.5 inches of a cinnamon stick
    1 medium onion - chopped
    1/2 a cup of vegatable oil
    3 green chillies
    1.5 inch cubed ginger - finely sliced
    5-6 cloves of garlic - chopped
    1+1/4 tsp salt
    500g lamb mince
    1 medium tomato - chopped
    1 cup of peas
    * spice mix
    1 tsp chilli powder
    1 tsp garam masala
    1/2 tsp cumin
    1 tsp curry powder
    2 tsp coriander powder
    Method:
    remember to prepare all your vegetables ahead of time, according to the instructions above.
    Step 1, put a large saucepan onto a medium high heat and add half a cup of vegetable oil, let it get hot then add your cinnamon stick, bay leaves and cardamom pods. Follow that up with your diced onion and green chillies, stir for a few minutes as the dish heats back up. Remember it will cool down when you add room temperature ingredients!
    Step 2, after 5 or so minutes when the onion becomes slightly golden and starts to lose its rawness, but isn't cooked yet; add your ginger and garlic along with 1 and 1/4 teaspoons of salt. This will help to remove the moisture from the onions and caramelise them.
    stir to combine and cook for a couple of minutes to remove the rawness of the garlic and ginger
    Step 3, Add your 500g of lamb mince. Cook for 5-10 minutes until all the meat is browned properly and the lamb lets go of its juices, there should be a thin watery sauce at the bottom of the pan which is perfect for....
    Adding our spices, add your spice mix such as the one provided in the ingredients list above, stir into the dish until a nice colour develops.
    stir and cook for 5 or so minutes so the spices lose their powdery rawness and give the meat and sauce their flavour.
    Step 4, add a chopped tomato (or two!) , this gives a bit of a base for our sauce, this isn't a saucy dish like the way some Keema's are cooked but there will be a little from the tomato.
    Cook for another 5 minutes or until the tomato's lose their moisture and produce some extra moisture to the sauce, this is perfect now for adding our cup of peas into the dish. After the peas add enough water so that it covers about 80% of the ingredients. Cook for 12-15 minutes or until there is no more water left in the dish
    you can add enough water to cover and take your time like a slow cooker dish but at this point we are just reducing the dish so that ingredients reabsorb as much of the juice in the pan as possible, until its almost dry!
    Like I said it is not a saucy dish, you can make it that way if you like but this is my preferred way to cook it!
    Serve with a garnish of ginger julienne and fresh coriander, serve over some boiled rice and enjoy!

    5 STARS. I live in Texas. Good curry is not the easiest to find here, so my husband and I have been searching for good recipes to try at home. I had ground lamb in the freezer, so we tried this recipe and it was WONDERFUL. It's authentic, flavorful, and absolutely delicious. We had to use jalapeno peppers as a substitute for green chilies and they dissolved into the sauce (is that supposed to happen?!?), but other than that we followed this method to a "T" which is SPOT ON. You will not be disappointed. Thank you so much for sharing this fantastic recipe with us, Latif!!! My only regret is there weren't more leftovers to freeze because we both had second helpings! *starts saving for Latif's cookbook*

      I'm glad Americans love our food. You could use habanero or scotch bonnet chillies. I'm Bangladeshi like the chef and love Naga chillies.

      You can pick up the green chillies, latif uses at any indian grocery store like "Patel Brothers" or India Bazzar. Patel Brothers is better and they have all the spices from this recipe.

    I just made your Keema and it was restaurant quality, on the SECOND attempt!!!!
    I didn't follow your measurements, first time around.
    I watched the video and said, "there's no way that's a puny teaspoon, I'll make it a tablespoon and then double it." Talk about quicksand and gritty.
    I tried it again, following EXACTLY as you, Latif lay out.
    It was sublime.
    To make Keema, Defcon 1 heat level, hot as I like, any time I want now. Let freedom ring.

    As my husband and I are visual learners this recipe is so easy and tasty!!! It’s hard teaching curries but this has been helpful for us both the video and instructions within the video. I usually don’t listen when people talk and just watch the ingredients as it can get long and boring but this was so helpful and clear, can’t wait for more recipes 👏🏾

    Dude. I've followed your channel for the last 2 yrs. You are an inspiration. This is the one dish, I keep coming back to whilst I'm cooking this every other week.     Hey Latif, thanks from Toronto and for bringing back VERY fond memories of when I was taken care of after school by the Maliks. May they be blessed wherever they are. It’s all I can remember Mrs Malik cook, I remember it sooooo well. I know it was different according to their regional taste, but I’ll cook this in tribute to them and in gratitude to you and your mum. I pray for all our health during the COVID19 pandemic.     Latin my family were Anglo Indian and my Mum would cook this regularly and we loved it as a home style dish and I cook it still for my family. You made ginger and lamb the stars but often Mum would use mince beef which she made really well with potato cubes and fresh mint as the feature....thank you for sharing this and I love your program...

    This is so similar to how I cook mine, additionaly I use1 star anise and 2 black cardamoms at the start, when you add the spices I add a heaped spoon of tomato puree and some water, cook a little then add 300ml of chicken stock, add a lid to the pan and gentle simmer for 30 mins, add peas and thicken with potatoe starch, sometimes add a little cream, my kids love this and very easy to do.

    Absolutely love all your videos, and I love how real things are. I know you said people are meticulous with time, but I find it so much helpful that you show what we are looking for in terms of texture/colour change etc. I think it helps us become more confident and intuitive cooks rather than just blindly following times that may not even be accurate when everyone's equipment is different lol

I think that you are great chef, person and a great communicator.As a crazy curry addict living in Belfast who likes making his own from scratch your generous videos imparting the theory behind a perfect curry are helping me to do a better job. Love your enthusiasm! My first unforgettable curry experience was in Birmingham in 1985. I went to a basic little Balti restaurant where they served a delicious curry to me in the Karahi it was cooked in and provided a large nan to eat it with. Knife and fork were not an option.     I have made this since 1980, there was a guy in a tiny shop who stayed open until 1am in the morning, his name was Ali (this was in Ashton u Lyne) he sold Keema Pitta's to all the lads who came from the local pubs at £1 a go, I watched him make it and copied him, it's just like yours mate, I'm gonna make it tomorrow again, thanks for the vid and all the others, top man.

    One of my fav dishes , 1st time I tried it was the Halal section of the NHS food menu ( some nice stuff there , better than the usual muck on the main menu anyway ) had it nearly every day I was in but when coming out it’s one of them dishes that are very hard to find , even my local takeaway didn’t have it , the only place was Iceland ( well Kemma & pototoes & K & Chick peas ) know with ur great recipe I’ll be trying it next weekend -

    Hi Latif. Wow, this was excellent. I'm 53 and ever since I tasted my first ever curry when I was in my 20s, I have loved keema. I had a keema balti in Birmingham in 1990 and never looked back. I often cook a keema and always willing to learn. I cooked this just this evening and my wife and I LOVED it! So delicious and authentic. So thank you so much for sharing and thank you to your mum too of course - no wonder it was your school boy favourite. Following your recipes is helping with the lockdown too - you bring some love into the kitchens and it is so kind of you to share. Best wishes. Rob.

    One of the first things my partner and I are doing when lock down is over, is take a 3hr round trip to eat Latiifs,. Love what your doing, certainly has helped me further develop my own skills. Thank you

    Can’t wait for the book, I’ve made so many of your recipes over the last 9-10 months, you’ve given me such an amazing arsenal of meals, I’m beginning to understand how to use spices and have even free styled a few times, thank you lovely man 😀😀😀

    Since I used to go to the famous Kashmir on spittal hill in Sheffield 30 yrs ago run by Paul and before him his father ,melamine tables ,v simple vibe but excellent curries and the keema Bhuna was always my favourite he used to say just like his Pakistani mother used to make .I like the way you add the julienned ginger as of the many I’ve tried this is the only one to do so also the addition of tomato late in the cooking for those jewels of fresh flavour ! Fab .all power to your cooking arm .
