My favorite opening level would probably be the Great Plateau from BotW. It's basically a condensed version of the entire overworld, and unlike most opening levels I've played, it's open-ended and even provides players some insight into the finer details of the gameplay.
I’m a huge fan of the Great Plateau from Zelda: BotW. It walks you through everything you could possibly need to know at your own pace and teaches you through showing and subtle hints rather than holding your hand the entire time, and yet you can’t leave until you know the basics, but you can do it in whatever order you want
One of my favourite opening levels would have to be from The Elder Scrolls IV: Oblivion. You get busted out of prison by the Emperor himself and his Blades bodyguards and go with them through underground tunnels while fighting off assassins who want old Uriel dead. After a while, Emperor Septim asks you to take his Amulet of Kings to a man named Jauffre in order to find his heir, before the Mythic Dawn finally catch up to him and cut him down. Baurus, one of the Blades, believes you when you tell him what happened and tells you to go on ahead while he takes the Emperor's body to give him a proper burial. You make your way through a small sewer system, eventually reaching a long pipe with daylight shining in from outside. You open the grate at the end and are greeted with the most spectacular view of the land of Cyrodiil that is ready for you to explore at your leisure. Amazing.

A recent one for me would be central Yharnem from Bloodborne. It shows a lot of what you can expect from this game, from the first enemy being able to kill you without even trying as a way to show, you will die, no matter what you will die, how to react to enemies, shortcuts to skip enemies and find treasure, and how sometimes you shouldn't fight just run. It's well built, I quite like it.
Since you brought up Christmas, I finally got the chance to play the Mega Man Zero series and experience the insanity that is Kingdom Hearts thanks to the Mega Man Zero Collection, Kingdom Hearts: Dream Drop Distance, and Kingdom Hearts: 358/2 Days. I also got New Super Mario Bros., the Sonic Classic Collection, Black Panther, Avengers: Infinity War, Avengers: Time Runs Out, and the first volumes for Immortal Hulk and the current Venom ongoing.

Most Favorite opening level is Day 1 from Ninja Gaiden 3/3: Razor's Edge not only is it a good tutorial on how to play the game but slicing up terrorists as Ryu is satsifying along with pulling off the Falcon Dive is awesome and we get two awesome boss battles one is a spider-mech that was all-right and an amazing first fight against the Masked Man who definitely shows he's equal to Ryu in skill.

Hmm personnaly I would the opening of Nier Automata is a great first level, starting off with a Shoot Them Up that introduce the gameplay, then the Level introduce everything, close quarter combat, how to use your pod, the different type of ennemies, how the game like to play with the camera and a good boss fight at the end of it all while introducing the 2 main protagonists, the overall world and let's not forget that God Like soundtrack. Also when it comes to Mega Man I think my favorite intro stage would be the one from Mega Man Zero 4, not gonna lie Zero 4 is a regression compare to 3 but damn his first stage is actually really well done, the cutscene with human trying to escape Weil's soldiers, the music that perfectly reflect how much the world has fall into chaos since Dr Weil took control (Yeah I honnestly think Caravan - Hope For Freedom is kind of underated theme), not to mention Zero 4 finally gives you the new weapon (in this case the Z-Knuckle) right away allowing you to experiment with it right away instead of givig the new toys after the first stage, all concluding with a decent boss that make good use of the Z Knuckle, I really think this Intro Stage is great.
In case of Sonic games, my personally favorite one is a Seaside hill (cause of a music, mission of chaotix (thanks for not knowing English language, I were heard somehow Russian F word) and for showing how Chemic of Sonic Heroes is working.
