I made some of the American cheese last night. I used 500g Tillamook Cheddar and 200g of my handsmoked creamy Gouda. I used a 2.5lb stainless steel cylinder I use to make bologna in that I Sous Vide. Mmmm Mmmm it turned out amazing! Thanks for this recipe, you are AWESOME!
A lot of hardcore at-home dry-agers actually use the pellicle trimmings in burgers - it's pretty intense with the dry-age flavor and is a good way to get the "loss" back. Others use it to make beef stock or demi-glace.
Excellent episode! If I was forced to pick your best episode ( if that were possible), this one would be in the running! Non-foodies would say it was too much work but you and your subscribers know it's not work at all, and it comes down to that love at first bite, that is over the top in every way! I appreciate you mentioning the processes that happen in the meat when you make a patty with fresh ground beef. I've always been plagued with them falling apart on the grill/griddle until I saw your first chudburger video. Now I press my patties a day in advance and they never fall to pieces.

Dude, tried something new for my burgers. 1/2 lb burger logs from fresh ground (at home) chuck about 7"-8" long for a burger wrap with whatever. Super SUPER juicy. I will NEVER (almost never) buy ground beef again, thanks to this video. The wife likes to use taco seasoning with tater tots, sour cream, tomatoes for a totcho wrap, YUM YUM

I smoke briskets, butts, ribs, chicken halves, turkey and turkey breast and I gotta say that burger has been the best one I've ever seen on YT. I avoid eating red meat like I do C19 but I wouldn't mind a gout flare up for a bite of that burger 🍔 😋
I was literally trimming up a brisket for my dads Christmas pastrami… whilst watching this, and I may have just accidentally on purpose cut of a chunk of brisket for the grinder… making this tomorrow, and love the cheese recipe!

Could you do a video, or explanation alongside a video, about how to do overnight cooks? When something takes 12+ hours to cook, and some of it has to be overnight, how do you do it safely? Can I go to sleep and come back to it in the morning? If so, do I have to do something do get that result?
