You know, that's my Christmas Dinner since at least 10 years (I modified your recipe just slightly (basically like you do it here with three filets and also fully enclosed in spinach and puff pastry, almost like a Wellington), because I couldn't get hold of a big piece of salmon and because I'm lazy. A great recipe and ideas, thanks Jamie, you are as usual a cooking and chef 🌟 I was thinking for those without a robust budget for buying salmon, any good quality sausages or meatball mixture or other meats could work, or a mix of vegetables that roast well instead.
Brie cheese maybe? It would melt beautifully if cut into thin slices a placed between the fillets. Could also do a cream sauce with same pesto flavors 😉😋
This is not salmon en croute please do it properly or don’t do it all supposedly en croute meaning to wrap it in puff pastry this is only partial it wrapped don’t let the French chefs see this sloppy work
