    About Master Sushi Chef Hiroyuki Terada:
    Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on TH-cam.
    At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine.     I'm not vegan but that looks delicious. It might be more stable with rice outside but it is gorgeous to the eye the way you made it. A dressing or even a little sriracha would take it to the next level IMO. Chef, I love when you experiment and push the creative limits like this. It is a privilege to watch you work.

    HIRO!! I am a fan of your videos and I wanted to tell you that I REALLY appreciate this vegan roll you prepared. You even took the time to use spinach instead of Nori, which I didn't even know Nori wasn't exactly considered vegan until I looked it up. (I still would've just used organic Nori since the ingredients are vegan friendly). Recently, I've transitioned to being vegan myself for health reasons and that means a lot of my subscribed channels are full of content that I no longer can relate to, so I was so happy to see this uploaded today! It really is so important to eat more plant based foods, whether or not someone decides to go vegan. Please make more vegan dishes to show that health foods are also delicious!

    I'm a vegan who likes spinach, but I love seaweed. I will try your combination of vegetables, but I will definitely use nori, for the taste as well as the simplicity of making it easier. :-)

    I nearly smell some consciousness poking through after having had left a remark on that foie-gras episode last time I was around here..
    Awesome work, especially the spinach as nori part which is totally unnecessary (nori is vegan) but a typical "I do because I can" move that makes me (no-name vegetarian hobby chef) love watching you, seeing those small details that show off that kind of "punk-rock meets mozart" feeling that your cooking habits have.

    Years ago I did something similar for some vegetarian friends who were with us for a sushi dinner. I didn't do the spinach on the outside (because I am not a masochist) but rather just had the fresh baby spinach unblanched and moistend with tamari on the inside of the nori. I diced the portobello and sauted it in teriyaki. The carrots I did using baby carrots which I always have around for salads and snacks using a peeler to get very thin slices. The asparagus was also blanched using fresh local first-of-season very thin and tender beautiful stalks. I smeared some Haas avocado on the inside of the nori before laying on the rice and had thick slices running inside. I am an avocado man - in Mexico I loved to eat 3-4 small ones from the local orchards purchased yesterday at the village tienda with a couple tomatoes or a fat papaya with a little coffee right before hitting the early morning surf. Unfortunately I didn't think to add cucumber or beets to the maki which would have added color and sweetness. I also never thought of doing a thin-sliced portobello nigiri which probably would also have been a hit. Maybe that's an idea for a future episode..?
    Putting on my engineering hat, I wonder if just plopping the blanched spinach down on a sheet of parchment paper, forming a rough rectangle, and using a rolling pin to flatten and squeeze together, then baking for maybe 30 minutes in a 250F oven would make it more cohesive like nori and therefore easier to slice and hold together? That would cost a little of the fresh flavor but might be a good trade-off for ease of assembly and consumption - no blow-out like on the second slice.

    Steam the spinach as a sheet using a colander over a pot of water and a small cooling rack. That way you lay out the spinach when it is raw which is much easier to do.

    To those going to try this, I have a few tips. Like he said, use the spinach on the inside and use a good butter green on the outside and hold together with small portions of wasabi. Salt the water that you're blanching in and roast off the beets for either a better texture or to turn into a puree which is what i did. Cook the asparagus and carrots after blanching in the same oil the mushrooms were cooked in to make harmonious flavors and then wrap it up and enjoy! I don't dislike hiro's version and it is definitely healthier, i just like to put as much flavor and meat feel into anything vegan i eat.

    Hiro, one small suggestion , maybe substitute the spinach with blanched collard greens ,you can shave down the stem and it will make things go a little faster and easer to roll , ( Hell with it give some real sushi ! ) 🤗

    I still would have used nori, instead of spinach...nvm ended up looking it up and I guess it's not vegan friendly because mollusk shells are used to grow it. Another note is that it's animal exploitation with what I read, a little bit extreme because it's not like they are abusing them but just collecting the seaweed from them. Mollusks really don't need it, they already get enough nutrition from all of the nutrients around them.

      There's some (not all) vegans who feel like they are superior to everyone else just because of their diet. They go crazy when someone isn't a vegan and start pushing it onto them like they're trying to convert you or something lol it's pretty insane. Some will brag all day about it and demand you change your diet or else they say you don't care about your health, or that your damaging the world. It's just ridiculous haha
      My sister has a vegan friend and she is actually really cool and understanding. She never brings it up unless it's brought up by someone else or if someone is making food for us. Some vegans are ok but others tend to be real assholes.

    Why work so hard to make a wrapper out of spinach? Seaweed is completely vegan, and also very healthful. You could put spinach (raw or cooked) on the nori before adding the rice, or you could chop up cooked spinach and mix it into the rice. But it's very colorful - almost like a salad in the form of a roll :-)

      I thought they grew it attached to large nets, so it would grow more or less naturally, but be easy to harvest.

      Wrong. The seaweed itself is vegan. I think you’re just trying to make it look complicated.
      Animals die during cultivation and harvest of vegetable crops. Does that mean vegetables are not vegan?

    Hiro, who cleans dirty dishes after each episode? For me it is a special moment, I can meditate on myself and on the day to day of my life, besides being able to take care of all the dishes, knives and cooking tools valuable just for me. Very romantic to be a tedious activity? :) The philosopher Cameraman only films, explains, decorates with his voice, eats and melts hundreds of adjectives in each episode? He does not wash dishes or fix disorders or buy products? :)
    You use a table knife to extract the avocado slices, good trick to avoid a wound, thanks to us for more details.

    And now carrot sushi roll. Where spinach is at use carrot or make pickle sushi wrap. I never see cheese in sushi? I wonder why... Anyway I love all your cooking shows and hope to see more. Maybe a dragon roll or something with the Carolina Reaper, Bhut jolokia, or habanero! I figure dragons love spice hot things!
    Hope someday someone will come up with an Italian infusion on sushi. Marinara sauce with Italian cheese, and sausage? Who knows it would be fun!

    Could you use Kale instead of Spinach? Looks very good, but I'm a big fan of red meat. I would have this roll along with a seared filet, and an ice cold beer. Hmmm. Now I'm hungry. Lol. Take care.

    Hiro,I'm going to try this except I'm going to do a rice paper for my outside wrap on it and maybe do picked radish instead of the cucumber,I to like to experiment,with different fillings ,so does this make it vegan" fusion" sushi ? Have you thought about doing a bento box video's ? 🤔 👍

    Great recipe ! I would however use mature spinach leaves or bettes... and prepare them like Hiro did with the roman lettuce. It takes too long with baby spinach... How patient he is !
