    Tried this recipe today and it was a huge success! I did some substitutions in order to use ingredients I already had at home (used a regular eggplant cut to a width similar to that of a Chinese eggplant, subbed the cucumber for carrot, added baby spinach and baked tofu to one of the four rolls I made) and it was still delicious.
    It was also my first time making sushi at home and the final result was beautiful, all thanks to your detailed and thorough instructions 😊

    • @MonsonMadeThis

      For me, the best way to stay vegan has been to find ways to cook the foods that I love, without the animal products. That's my journey and my "ministry". If you feel like you're missing out, or having to give things up, then you're not going to want to stay vegan. The more delicious that it is for you, the easier it's going to be.

      That's awesome that you're looking out for your vegan brothers. Chinese eggplant is fairly available in my area, but if you can't find it, just use a regular large eggplant. Just cut it thin, and then maybe cut it in half lengthwise before cooking. Eggplant comes in all shapes and sizes, but from what I can tell, they all taste the same. Let me know how it goes if you give it a try, and let me know what your brothers think of it.

I just wanted to point out the part about No plastic July, which I’m glad you participate only …so you don’t use cellophane but you bought a plastic sushi roller and use a plastic cutting board and plastic baking liner. There was also plastic sesame seed jar and maybe plastic in the handle of the knife. I realize it’s been 5 years since this but I hope you quickly realized how much plastic you used while avoiding plastic. Plastic wrap is the quickest to go in the landfill and ocean for sure but plastic is becoming more inescapable these days for sure and it sucks

    It looks absolutely delicious! However I'm not a great cook and my country has different types of measurements, so I'm not confident that I'll be able to pull this off lol. But IF I choose to dare and make an attempt, I have a question! Does that microwave/oven/thingy have the same system like... regular ovens? Like if I don't have an oven like that and just a big, regular one, can I put the eggplants in the same heat-number and the same amount of time??? I've never used an oven like the one you used in the video so I have no idea

    • @MonsonMadeThis
      @MonsonMadeThis  4 ปีที่แล้ว

      Give it a try! You might surprise yourself. The small oven I have is just a small convection oven. It doesn't use microwaves or anything, so it cooks just about the same as any other oven. You should be able to put the eggplant in whatever oven you have with the same results. Depending on your oven, it might take a bit longer, or less time, but otherwise it should be the same.

      Hello! I purchased mine at a Japanese store near me called Tokyo Discount. I'm sure if you should be able to easily find them online, and for very little money. I think I paid less than $5 for mine. They are really nice in terms of sticking, and yeah, they rinse off and clean much easier and you don't have to use any plastic wrap.

      The one I have is OXO. I "borrowed" it a long time ago from an old roommate. It has the V shaped blades... It works really well. I wish I had a metal one, though. The glove is key. It makes it some much less scary, which makes the mandolin work a bit better, I think.

    I've seen in other videos that they do push down the rice. Why do you suggest it's best to not push it down?

    • @MonsonMadeThis
      @MonsonMadeThis  3 ปีที่แล้ว

      If you watch the pros (which I am not), you'll see that they just distribute the rice around without pushing it down. It's like they try to separate the grains of rice as they try to cover the nori. When you push it down it just changes the texture. It's much lighter if you don't. Less dense. Through the rolling process, the rice will get pushed down a bit, so it just comes out better if you don't press it down in the beginning.

    • @MonsonMadeThis
      @MonsonMadeThis  4 ปีที่แล้ว

      I think the rice is supposed to go on the side that is a bit rougher; not the shiny side. How are they falling apart? Are they breaking, or is the rice just falling out? I find that a big trick is the rice. Always use a short grain rice, and cook it with the right water ratio. If a rice is too dry, or is a longer grain, it won't stick together. Thanks for watching! Good luck!

      I like "calrose" rice or short grain rice. Google directions for cooking it for sushi. The kit might not be a very good kit, unfortunately. Just buy the nori and the rice separately, and you might have better luck.

    "Vegan sugar"?! Isn't all sugar vegan? What's the difference between a Chinese "eggplant" and an ordinary one?

    • @MonsonMadeThis
      @MonsonMadeThis  4 ปีที่แล้ว +1

      You should Google it to find out a bit more, but it has to do with the use of "bone char" to refine white sugar in the States. In terms of the eggplant, there are different sizes. Japanese, Chinese and Filipino are all longer and skinnier, with a thinner skin. Indian are often small and round.

    I've never had sushi (granted i've been vegan for the last 18 yrs) so i recently tried my hand at making vegan sushi. Unfortunately the very poor quality of the only sushi nori i could find in my small town ruined the dish. It was impossibly chewy and tasted of rank fish, which i guess that's not how it should be. It wasn't even edible, i had to spit it out 🙁
