If you want to get the water out of your mushrooms, you start with a dry PAN.Add the salt, get all the water off.Then you can brown them in your oil.That works much better

That's one beautiful omelette, Marie. 😁 I need to buy a new pan for the smoothness of cooking and release for this omelette. Nice video,,thank you, you made a lovely omelette and really broke it down into simple and understandable steps. I do take issue though with your claim that washing mushrooms in water is somehow bad. Many, many years ago in culinary school we were taught not to wash mushrooms, but rather to pat clean with a damp cloth,,,mostly because that was the French way. For some reason that idea is still pervasive in cooking philosophies. But science has shown us that is just silly. You can completely soak your mushrooms in water before cooking them. A mushroom is made up of tiny pockets. Once the mushroom takes on heat it will squeeze out all of its liquid from those tiny pockets and begin to shrink in size. When that moisture evaporates this is when the mushroom takes on a good sear and the best time to add the oil. The oil will resist coating the mushroom while it is still excreting water. In fact, you can actually get a sear on a mushroom without adding any oil at all,,but the oil provides flavor. The absolute best way to cook a mushroom is wash it in water to remove all the dirt,,,toss it in a dry pan on medium heat, add in a splash or two of water and let it simmer on low/medium until the water has evaporated, then add the oil, and seasonings to sauté for a few minutes. Your omelette recipe is great; it looks absolutely delicious. I love that you cooked the mushrooms and spinach before adding to the egg. I hope you experiment with washing your mushrooms and cooking out the water.

Your husband like five eggs because males need a lot more protein to fill out the necessary daily levels all men need. Women have their own nutritional needs as well. Rubber spatulas aren’t heat resistant/tollerant. I believe you meant to say silicone or high heat spatula. Heat dries out the rubber overtime cracks form and potentially melting depending on the heat of the pan. Sorry for the word correction but some people may still have rubber spatulas on hand . They are good for mixing room temperature or cold items.

Jim, I am glad you’ve been in every kitchen on the planet and are 100% sure that no one uses them anymore. I was not intending to insult in my comment, however I believe you thought I was. I know people who still own rubber spatulas and use them. They don’t discard an item that still has purpose even if technology has made a better product. Some people actually follow instructions to the letter and could grab the rubber spatula not realizing the difference. Retailers still sell the rubber spatulas so they are out there to be purposely or mistakenly purchased.
