I’d watch a Let’s Play of Shield. Maybe you can do a “Colorlocke” where you can only catch Pokémon of specific Dex colors (no matter how wrong they might be).
The biggest problem here is the inconsistencies. Sometimes clothes/shells are included, sometimes they're ignored. Some pokemon stick with their evolutions, others are separated to the correct colours. Sometimes the face is the main factor, sometimes it isn't
Also how some of these sprites in Home are way more saturated or different colors from the regular in-game sprites or official art. Like the Abra line. They're a much lighter yellow in the games.

Actually, Applin being green is correct. It’s actual form is all green. The apple is actually not part of it’s biology until it evolves so yes it does make sense as to why it’s categorized as green.

Idea for Shield Do a playthrough using only one type Example: Choosing Grookie then only having grass types (Duel types are allowed, as well as trading if you want or if the pokemon can only be traded) and then beating the story (Not the pokedex)
Love me a good Monotype. Between the Wild area and Isle of Armor, you can realistically choose any type and have it work, since literally every type is available before even registering for the gym challenge.
Another interesting fact: In linguistics class we learned that different cultures categorize colors differently. So something we in countries with languages of Latin origin define colors differently than maybe other cultures around the world.
For the sake of argument; in Japan, blue and green were considered one colour, "ao", for a very, *very* long time. Even after the word for green, "midori," was introduced, plenty of things that are green are still referred to with the word "ao." This more flexible outlook on the two colours can be used to explain bronzor and bronzong: bronze, having high copper content, oxidizes green. Bronzor and bronzong, being an ancient bronze mirror and bell respectively, are obviously oxidized. Thus, the pokemon must be green, despite the colour of the design being what we would call blue. Copperajah vs. vikavolt is the same thing: oxidized copper is green, so the copperajah is green. Vikavolt is *not* oxidized copper, so it's blue. \o/
The Bronzor/Bronzong thing is ridiculous, but there is actually a fun explanation for it: Those two are designed after rusty bronze things (obviously) Bronzor is based on a rusty bronze mirror yo-kai, and Bronzong is based on an ancient bronze bell who's name I can't remember. Being an alloy of copper and tin, bronze "rust" is green, much like the copper used to make it.
Yeah it does lighten mainly blue by a bit so that might've been a mistake, like loudred specifically, exploud has switched between blue and purple alot but the one in the game is blue

He probably perceiving the colour as darker because of the surrounding colours. The pink on milotic looks darker because of the lighter tan and the pink on porygon 2/Z looks lighter because of the darker blue.

Wow, I forgot elgyem was categorized as blue until just now. I actually thought it was categorized as grey until now. I only just realized cranidos and rampardos were categorized as blue, not grey very recently, really they have less blue than druddigon has red, it doesn't even cover their whole face. Also, I'm pretty sure I was today years old when I learned that Alolan marowak is categorized as purple, not black. Same with zygarde's 50% form being the only green one.

His is navy blue but like dark. His is the swellow honchkrow and murkrow colored navy blueish black. On your pokemon shield you could do an eeveelution challenge: every time you beat a gym you need to add an eevee to your team, which will be evolved later. By the end of the playthrough, your whole team will be eeveelutions. Every pokemon on your team must be a different eeveelution.
"In what universe is Bronzong GREEN?" Actually the recently released Diamond and Pearl Beta sprites show that Bronzong was originally meant to be a teal. It was probably classified as green then and they forgot to fix it before the release... then never fixed it afterwards...? The Haxorus there, from what I can tell, is inside of a darker place. It looks muddier because it’s in a very dark building which might be why you see green. I’ve always seen Haxorus as gold- which even if the yelloe is brighter, I would’ve still put in yellow.
Haxorus is definetely gold
Official art has it vary between a dull greenish-yellow to a dull yellow, to even a bright gold. So putting Haxorus in yellow is good.
In gen 5, its introduction, its a pretty clear gold with a slight green tint to it if i recall.

Wow, I forgot elgyem was categorized as blue until just now. I actually thought it was categorized as grey until now. I only just realized cranidos and rampardos were categorized as blue, not grey very recently, really they have less blue than druddigon has red, it doesn't even cover their whole face. Also, I'm pretty sure I was today years old when I learned that Alolan marowak is categorized as purple, not black. Same with zygarde's 50% form being the only green one.
Elgyem being in blue is kinda baffling to me personally because it kinda looks like a pastel mint kinda color in my eyes, and also it'd just be more fitting to be in green given its namesake is based off the term "LGM", Little *Green* Man
And even if y'wanna brush that off as being a purely localization deal, in a similar vein to Mr. Mime having the masculine honorific despite being able to be female [even if the name was before genders were properly added in the following Generation], Elgyem's original Japanese name is Ligray, so going off of that, it should be grey like you originally assumed

I will die on the hill that those birds blue tint aside should have all been in black cause it was that thing where it's supposed to be black but they gave it a bit of color to make it have that kinda feather glow birds have in the sun. And the one who asked the colors yours is between like a green apple green a true green and a lime green and has that like neon highlighter color brightness to it. So for me it's hard to tell the difference but I am not colorblind so that doesn't answer your question properly XD
