That corn looks amazing but, as a long time corn farmer, those cobs still have a LOT of corn and flavor left on them! That half the kernel and the corn milk is where all the sweet flavor is, so definitely don't lose that! Take a butter knife or a large spoon and scrape down each row , over the bowl. You will get little bites of the best tasting corn you EVER HAD as well as the sweet sticky corn milk which will add that flavor to every kernel you've already scraped off. Give it a try and you'll never go back! And another easy peasy easy to cut fresh corn is to stick the cob inside the center of a BUNDT PAN and run your knife down so the kernels fall into the round section. It works great and you get ALL of the kernel instead of just the outside half! You'll find you harvest about 1/4-1/3 MORE corn per cob this way, which is a frugal home cooks best way to save money!!
I make corn cob jelly with the cobs. Otherwise know as "poor man's honey", it tastes like honey and is almost free. You have the cobs, so you just pay for the sugar. Love it!

Currently we are stationed in Okinawa so our seasonal fruits and vegetables are different than in the States;I had a container garden in North Dakota and Arizona but we can’t have a garden here😢. Living in a subtropical climate, tropical fruit is more affordable ( dragon fruit for $2-$2.50), one watermelon here can cost $20. Vegetables are reasonable and I have learned to cook many Japanese dishes with ingredients not often found or very expensive in the States; burdock root, bitter melon, lotus root, just to name a few. If you love mushrooms, Okinawa has at least 20 different types that are fresh, delicious and cheap and many varieties that would be considered “exotic “; enoki, king oyster, chestnut, beech for less than $1. I want to try canning but need to invest in the equipment; I have an instant pot and have to learn how to use it. Anyway, I am storing up all your great tips for when we move back to the States. Thank you!

It's true. I stayed with a family member and saw how easily I could have saved them fifty percent on their groceries for their family. Learning to preserve and make use of leftovers, cooking with what needs to get eaten first so it doesn't go to waste, and wise shopping go a long way.

I have a little corn trick that always makes me laugh a little- I don't have a kernel stripper but I have a bundt pan. I just shove the small end of the corn cob into the hole in the center of the bundt pan and use a knife to slice down around the cob. The center hole holds the cob in place and also catches the kernels in the pan. It also makes for one more way to use a rarely used pan in my house!
Yes, and you get off so much now corn than using a stripper! I was so sad to see half the kernels left on the cob with most corn strippers, I've tried a few. The Bundt pan is my go to!

I scored 10 pounds of high quality chicken from the bougie grocery store that never has clearance meat for about $20!!! So happy to see you. I have been watching for you and hoping all is well for you… great video. I love the idea of roasting the corn cobs before making broth. I put up around 50 jars of corn broth each summer to use for all my winter soups. Roasting them first will be my plan for next year. I recently canned my end of summer tomatoes into pasta sauce. Because I had just watched Ruth. Zimmerman make fresh pasta sauce using her fresh roasted tomatoes, I decided to try canning it that way. Wow, talk about a game changer! Everyone raved about my lasagna made with that sauce. I love watching you wonderful TH-cam cooks. I’m learning so much from you. Thank you.

Keeping it real girl is why I always look forward to new videos as well as look back to previous ones for reference. Ok, so... I'm not sure if you're familiar with using basil seeds in place of chia seeds in your recipes. The benefits are wonderful in comparison. I thought about it when you said you over plant basil every year on purpose lol as if that's possible.
Ive always been frugal with food. As a young teen I had to start cooking dinner for my family when my mom went to school at night. Then when I could drive, my mom relied on me to do the family grocery shopping and follow a strict budget. I can’t believe as a family of 6, including 3 growing boys, that we shared one roasted chicken for dinner. Crazy. We did usually have some kind of meat for dinner too. The down side is we usually padded the meal with a lot of carbs that we could have as multiple helpings as opposed to the meat. (While my brothers stayed slim, I got heavy from the extra carbs and low protein!-as a result I’ve had to stay fairly low carb to keep a handle on my weight over the last 20years). Don’t know how we afforded it but it was usually ground beef, the cheapest cut of steak, or chicken or bone in ham. So I’ve historically cooked based on store sales. Or stocked up my own pantry based on what’s on sale. Now for our family we source local beef and pork so we skip that at the grocery store with a few exceptions such as a rare (no pun intended) prime roast or London broil sale. I pressure can meat and broths and use our grocery budget for fresh produce-we do not can veggies. We don’t eat corn, we don’t digest it well as much as I love the taste. But I love the idea of repurposing the corn silks for a tincture and I might try that. We do preserve fruits in season through canning, jams, and freezing. I like you am crazy for food preservation and cook meals based on what we have “in stock”.

Just bought 12 pints of blueberries and made dehydrated berries. Now I have something quick to put in yogurt that I make and oatmeal. Plus, tastes like candy good to snack on at my desk at school.

Nikki! Hey lady:) Yes, corn silk tea is delicious. Once I stumbled across how even the silks can be used (a few years ago) I know see them just as precious as the cob and other parts that I used to just immediately compost.
It's soo good and filling! It's a great way to reduce the carbs and add tons of extra fiber and protein making this an incredibly creamy, savory and nutritious meal!

Save your chickpea water and make mayonnaise use 1/4 cup for egg 1/4 cup of sesame oil 1/4 cup grapeseed oil 1/4 cup coconut oil mustard and vinegar

Honey, you are right about Florida! I pray that you and yours were safe during Milton. My folks are in the northern part which wasn't hit too bad (but there was significant flooding in some areas). My family and I recently experienced a tough situation that I'm not yet ready to share, but it required a lot of my attention and focus. I have to tell you that when I went to the store to get our meats last night I found the mother load of marked down chicken. I scored 10 pounds of high quality chicken from the bougie grocery store that never has clearance meat for about $20!!! It's sitting in the freezer right now and I plan to can it into some ready meals in jars in the next week or so. I never would have thought to grab them if it weren't for your content. 🖤🖤🖤

So happy to see you. I have been watching for you and hoping all is well for you… great video. I love the idea of roasting the corn cobs before making broth. I put up around 50 jars of corn broth each summer to use for all my winter soups. Roasting them first will be my plan for next year. I recently canned my end of summer tomatoes into pasta sauce. Because I had just watched Ruth. Zimmerman make fresh pasta sauce using her fresh roasted tomatoes, I decided to try canning it that way. Wow, talk about a game changer! Everyone raved about my lasagna made with that sauce. I love watching you wonderful TH-cam cooks. I’m learning so much from you. Thank you.

Keeping it real girl is why I always look forward to new videos as well as look back to previous ones for reference. Ok, so... I'm not sure if you're familiar with using basil seeds in place of chia seeds in your recipes. The benefits are wonderful in comparison. I thought about it when you said you over plant basil every year on purpose lol as if that's possible.

Ive always been frugal with food. As a young teen I had to start cooking dinner for my family when my mom went to school at night. Then when I could drive, my mom relied on me to do the family grocery shopping and follow a strict budget. I can’t believe as a family of 6, including 3 growing boys, that we shared one roasted chicken for dinner. Crazy. We did usually have some kind of meat for dinner too. The down side is we usually padded the meal with a lot of carbs that we could have as multiple helpings as opposed to the meat. (While my brothers stayed slim, I got heavy from the extra carbs and low protein!-as a result I’ve had to stay fairly low carb to keep a handle on my weight over the last 20years). Don’t know how we afforded it but it was usually ground beef, the cheapest cut of steak, or chicken or bone in ham. So I’ve historically cooked based on store sales. Or stocked up my own pantry based on what’s on sale. Now for our family we source local beef and pork so we skip that at the grocery store with a few exceptions such as a rare (no pun intended) prime roast or London broil sale. I pressure can meat and broths and use our grocery budget for fresh produce-we do not can veggies. We don’t eat corn, we don’t digest it well as much as I love the taste. But I love the idea of repurposing the corn silks for a tincture and I might try that. We do preserve fruits in season through canning, jams, and freezing. I like you am crazy for food preservation and cook meals based on what we have “in stock”.

Awww thank you! know its been a while. My family experienced an situation that threw us all for a loop and required a lot of time and mental focus to address. I'm happy to say that we've turned a corner and things are settling down again. I'll be sharing the content from the videos I had to abruptly stop due to those events. Nikki! Hey lady:) Yes, corn silk tea is delicious. Once I stumbled across how even the silks can be used (a few years ago) I know see them just as precious as the cob and other parts that I used to just immediately compost.
