How To Prepare Smoked Herring Two Trini Ways | Foodie Nation

  • You asked for it one way, here it is two ways:
    Choka Style
    Yield: 5 - 6 Portions
    INGREDIENTS
    ½ Lb Smoked Herring Filets
    3 Tbsp Small Diced Green Sweet Peppers
    2 Tbsp Chopped Scallions
    ¼ Cup Small Medium Diced Tomatoes, Deseeded
    1/8 Cup Julienned Onions (1 Small Onion)
    1 Pimento Pepper, minced
    3 Tbsp Olive Oil
    ¼ Tsp Black Pepper
    METHOD
    1. Place filets of herring into a medium bowl and add enough boiling water over it to cover. Let sit for 15 minutes to allow the filets to soften up and dispel of its saltiness.
    2. Drain the water after the soaking period, wash with tap water and drain again. Squeeze the excess water out of the filets properly.
    3. Break the softened filets apart using your finger tips, shredding them into little pieces removing the tiny bones as best as you can. If some remain, it’s ok as they are soft and won’t choke you.
    4. Place shredded herrings into a clean bowl and add the sweet peppers, scallions, tomatoes, onions and pimento pepper.
    5. In a small sauté pan, add the olive oil in and heat until it begins to lightly smoke. Remove pan from heat immediately and pour hot oil over the smoked herring choka. It should make a sizzling noise. Begin to toss and mix ingredients to incorporate all aromatics with herrings. Season with black pepper and taste. If you desire some spiciness, you can easily add a little minced pepper to it for a kick.
    6. Enjoy with crusty bread, baguettes, rotis, or even crackers.
    Fry Up Style
    Yield: 5 - 6 Portions
    INGREDIENTS
    ½ Lb Smoked Herring Filets

    Half Cup Thinly Sliced Onions
    1 Pimento Pepper, minced
    2 Tbsp Chopped Scallions
    ¼ Tsp Black pepper
    METHOD
    1. Place filets of herring into a medium bowl and add enough boiling water over it to cover. Let sit for 15 minutes to allow the filets to soften up and dispel of its saltiness.
    2. Drain the water after the soaking period, wash with tap water and drain again. Squeeze the excess water out of the filets properly.

    4. Place a small iron pot over high heat and add the 4 tbsp of oil. When oil is hot, add in the sliced onions, pimento peppers and sauté for 2 minutes. Add the shredded pieces of herrings in and stir fry for 4 - 5 minutes ensuring to break part the herrings into even smaller fragments as this would allow the pieces to crisp up.
    5. Add the chopped scallions and season with black pepper. If you desire some spiciness, you can easily add a little minced pepper to it for a kick.
    6. Remove pot from heat.
    7. Enjoy these fried up herrings with boiled provisions like Cassava (Yuca) or even as a great accompaniment to Dhal and Boiled Rice.

    Thank you so much for the tip on how to remove the bones. I love smoke herring but avoided making it as I was not skilled at removing the bones. Your method is a game changer for me and was able to make herring fritters. I can enjoy herring more often now. I may prep the deboned herring in bulk and freeze small portions to use at will. For the aroma, while windows are open, boiling anise and cinnamon sticks during cancels aromas out.

    Looove smoked herring...all ways..with fry or roast or coconut bake..sada..cassava..any ground provision..dhal and rice..rice cookup etc etc😁😁😁. There is a 3rd way where you roast tomatoes and add it to the smoked herring..scotch bonnet pepper too👍👍

    I love the choka version. Only difference is I add a pinch or two of ground geera in my hot oil before chunkaying it.

    Loving this. Boiling is mainly for the very dry smoked herring with the skin and/or head still attached.

    Thanks for 2 types herring dishes. To solve the fine bones problem, I think if you fry the herring crisp the bones cd be eaten?? Don't know just thinking. Also cd add garlic&parsley? Thanks a lot

    Who else knows that dhal rice smoked herring and tomatoes choka is called "a dougla"?? I only started eating this in my late 20's also. I like both styles. Yes please do a dhal recipe!

    Ik an old lady who used to roast the smoke herring then add the onion, pimento etc raw with a bit of olive oil, so it was more like a salad kinda😂 but it tasted pretty good.

      Traditional saltfish buljol is made with raw onions, tomatoes, peppers etc added to the cooked saltfish and with a bit of olive oil. My mom used to buy the whole herring and roast it as well. It smells up the place ! But now she says she is a modern housewife and she is buying the milder prepared herring that does not need roasting! Still... the long time herring has a better flavour.

    Thank You for posting this video! I just tried the first recipe and it was delicious. I don’t like bell peppers, so I excluded that ingredient and added a little bit of lime juice. I also did boil it because that’s how mom would do it when I was a kid. Very comforting dish!

    How do u make the roasted version? My husband told me how his mother used to roast the smoke herring could u plz tell me how to do that way.

      Bernice, for the roasted version, you have to get the smoked herring with the skin and head on, and roast it over the fire. This version tastes nicer. The smoked herring fillet will not work if you want to roast it over the fire.
