When they had that lechon on the table, when I heard the crisp from the lechon's skin, and the list goes on... Oh no! I was just salivating while watching this. Hahaha Now in the Philippines, we are having this community quarantine (lockdown), it's not easy to enjoy lechon. And I miss that so much! Lucy and George! There are multiple variants of Adobo :) what they had was white Adobo which doesn't have soy sauce :) others use kamias instead of vinegar as a souring agent :) would be cool if you try them too!

By the way, I remember Lucy tried doing the traditional version of Adobo, but you can just really make your own version with these ingredients: • Marinated chicken or pork or both (boil then give a quick fry before adding the sauce). • A good brand of soy sauce is a must. • Crushed garlic. Onion is optional (use the yellow one). • Red hot and green chili peppers are optional but it definitely adds the proper Adobo flavor. • Brown sugar or honey. • Calamansi for the balance (some use vinegar, but calamansi does the job better; lemon will do too). • Some use coconut milk (or evaporated milk) while simmering the meat, makes it more flavorful. • Bayleaf for aroma. I believe that version you saw is called Adobong Puti with 'puti' meaning 'white'. I really love watching your videos!

Adobo sa dilaw served there. It's one modern version of adobo. Dilaw means yellow that's why the chicken is yellowish, probably cooked with yellow ginger or luyang dilaw.
Here in Ph, for around $100 - $150 you can have lechon twice or 3x bigger than what they are eating. And if you want to have that full set up of boodle as what they have, here in PH it would only cost you around $200 to $250, again with lechon twice bigger than they are eating.
Here in the philippines the cost of 1 lechon is based on the size and how many people will eat. You can pay a lechon from the smallest to largest size which can pay from 5k or 6k to 15k or 17k philippine pesos base on my experience when i went to the philippines. Its kinda cheap but its so delicious.

As for the adobo, there's a loooooooooooooooooot of different types of adobo in every region. That particular one was adobong dilaw, hence the color. We also have adobong puti, adobong gata, dry adobo, saucy adobo, adobo with liver, adobo with potatoes and eggs. Really, as with all Filipino dishes, there's not one correct way to cook a dish. As long as you retain the base of it, you're good.

small lechon is lechon de leche... it is smaller to the regular size lechon... it can be ordered whole size from cebu or any who accepts orders
