    Teresa and Rick Starr have been eating whole food, plant-based (and cooking WFPB for a family of 7) for over 25 years. After suffering from TIAs (mini-strokes) for a couple of years, Teresa needed to find an answer. They discovered WFPB as a key solution to her eventual full recovery. They believe that the WFPB lifestyle contributes greatly to their active quality of life.
    Teresa holds a Masters degree in Positive Psychology & Coaching (MSPPC), and is an ICF Associate Certified Coach (ACC), as well as a Certified Health & Wellness Coach (CHWC). Rick is a Certified Positive Psychology Practitioner (CAPP) and Certified Professional Coach (CPC). In their courses and coaching, they specialize in helping people learn and apply evidence-based and values-driven tools and strategies to thrive at life.
    The Starrs teach an online 8-week video course, called Whole Food Plant-Based Adventure, where they share the research and wisdom of WFPB doctors, nutritionists, and other experts. In their course, they also share practical tips and guidelines to help people transform their lives, kitchens, meal plans, and menus to WFPB. Each week also includes WFPB cooking demonstrations and recipes. They created an extension to the course, to include 8 weeks of self-coaching strategies, as well as some group coaching, to help people learn the mental and emotional skills to help them WIN the game of optimal weight and wellness through a WFPB lifestyle.

    Nuts Over Berries Salad
    Ingredients
    1 ½ cups cooked quinoa, cooled
    5 cups baby spinach
    1 cup of other greens (baby kale, arugula, or baby field greens)
    1 cup strawberries (sliced)
    1 cup blueberries
    1 cup blackberries
    1/3 cup slivered almonds
    1/3 cup pumpkin seeds
    ½ cup chopped *maple pecans (or regular pecans work great too)
    1 sliced Avocado (optional)
    Gently mix all ingredients (except avocado) together (being careful not to bruise or squish the berries). If you’d prefer, this salad can be made with only strawberries or only strawberries and blueberries (adjust the quantity so that you have 3 cups of berries total). If desired, serve with sliced & diced avocado. Serve with Raspberry Vinaigrette OR Citrus Salad dressing and top with Maple Pecans.
    *For Maple Pecans, finely chop pecans that have been toasted with maple syrup.
    Raspberry Vinaigrette Salad Dressing (no oil)
    1 cup fresh raspberries
    ½ cup water
    2 tsp red wine vinegar
    2 Tbsp maple syrup
    Blend all ingredients in high-powered blender. Based on the tartness or sweetness of the raspberries, feel free to add in more vinegar of it’s too sweet and more maple syrup if it’s too tart. Store in in covered container in the refrigerator. Use within 3-4 days.
    Maple Pecans. Use these instead of candied pecans. Lightly coat whole pecans with a few sprinkles of maple syrup (just enough to barely coat them). Bake in oven at 350 until the syrup is hardened onto the pecans. They should be crispy but not overdone or burned. These taste great as a salad topper, or a “Nice Cream” topper. If you can stop at just one handful, they’re fun to eat all by themselves.

    Cut down on the salt we need 240 mg salt daily we eat to much salt, we cook with to much salt and the snack are loaded with salt

    This does not tell us how to avoid strokes...which is what I need. I have eaten wfpb no oil no salt no sugar but I still struggled w hbp. Now I have intermittent atrial flutter and mgus which fosters clots. I don't need a lecture on self care, and I wouldn't think of eating something unhealthy. Mindful awareness is already well entrenched. These guys mean well but I think most of Chef's listeners are way past this. How do I heal my heart and avoid strokes?

    As a neurologist, it doesn’t take much to recover from a mini stroke, FYI. I don’t even like the term mini stroke. It just means reversible stroke so someone who states that they’re diet has recovered from mini stroke is really exuberant. I’m all for whole food, plant-based diets, and everything about it. However, It’s erroneous representation of what whole food plant-based food would do. I’m stating this as an educational point rather than a criticism.
