  • In today's video I was plagued by the question: Can I get sear marks using my Pit Boss pellet grill? I had to find out!
    What's the big deal with those grill marks anyway? Those blackened marks on your steak happen because of something called the "Maillard reaction", a chemical reaction that occurs between amino acids and carbohydrates when food is exposed to extreme heat. The Maillard reaction is responsible for the browned, complex flavors that make bread taste toasty and malty, steaks taste savory and charred, and coffee taste dark and robust.
    One bite is all it will take and you will NEVER prepare a steak any other way.

    Just open the sear plate and turn the heat all the way up (leave the lid open) then put it on after about 5 mins. The point of the sear is to get the grates screaming hot, not the internal temperature of the grill

    Just a tip on these smoker/grill combos. Don't preheat the grill to get a good sear. As soon as you crank it to 500, the grill will put out a big flame to try to climb temp. Once it hits 500, the flame will die down to try to maintain temp. You want that steak on the grill while the flame is high

      I can second this method. Cool your steak tri tip whatever. Then set the flame to 500/high. Once that flame is cranking, open the sear plate. Put that steak or whatever directly over that flame
      For 1-2 mins each side. With the plate open it will stay on high heat as the way mine works the large flame Heats the grill temp but not the internal temp next to the sensor.

    I have the PB850PS2 and I agree, reverse seared steaks with the flame broiler are different from the direct coal sear and is next level. Super tasty. 🔥

    I have the pb850 pro v2 and I just tried the seat option this weekend with NY Strip and some Top Sirloin. Smoked at 220 the. Set it to high or 500 they turned out amazing best steaks I have ever made. I would try that steak. Great video

    That's a nice looking steak.
    I've been collecting cast iron frying pans and griddle pans in anticipation of the delivery of my Wildfire grill I saw on this channel. Hopefully I'll get good at doing a slow cooked steak with an 1,100° pan sear finish and some sides at the same time.

    Not sure about the new PitBoss smokers, but I have the previous generation PB850 Pro and from smoking (225) to searing (atLEAST 400) it takes a good 15-20 minutes even in the hot Texas summer heat. The key is to set the PB to HIGH. This will get it there quicker than setting it to a high temp like 475.

    Actually you don’t even need to wait for it to get up to 500. Just crank it up and pull the sear handle and you’ve got fire!

    Hey! Beebe Family Arms & Munitions here. :) Loved the Friday reference at the beginning. That tomahawk looks incredible! I didn’t know you could link your InkBird to your smart watch. Sweet! These videos make me regret letting hubs buy me a Traeger. I actually prefer my pit boss smokers. This one looks like it’s a lot like my Ironwood 885! Bet it was less expensive with more features too. Ugh!

    I am looking for a brand new smoker barbecue and I was thinking about a Traeger or a pit boss but after seeing all your videos I think I want to go with the pit Boss pro series 1150 for a beginner. Do you think this would be a good barbecue smoker for me and my family.

I think if I followed your videos I’m gonna be OK. Just overwhelmed by all the different smokers out there but after doing my homework, I think I’m picking the right one.

    It works better if you open the flame when it’s heating up. It’ll get hotter and sear better

    I used my PB850 successfully to put sear marks on my ribeyes. It worked, but I lost them as I finished the cook. But the ribeyes were a grand slam.

    I'd eat that steak. Figure if kids got that excited about it, it had to be good. I get good sears on my SmokeFire. Thing's a grilling machine. Great video and congrats on the move!

    Hey Guys, can anyone Tell me how long the PB needs to get 200f? My Navigator 1600 pro needs a very long time to reach the Temp. Over 30-45 min.

      Here is something to try. Empty out the burn pot and put a small handful of pellets in before you start it up. Then when you turn it on, crank the temp to 300. Once it hits 200 you can turn it down to 200 to keep it there. That should get you up to temp quicker.

    I just got my Pitt Boss KC Combo at a big discount at Walmart and I did your tomahawk steak. And it can out unbelievably great, No more Treager. I just don't like the no sear on Treager, and I sold it to a guy at a garage sale and I made enough money on the Trager to pay for the Pitt Boss KC Combo. Treager is so overpriced and does not perform as well as a Pitt Boss. Good luck to all the Treager owners.

      2 mins per side (1 min, then rotate for 1 more min to get the nice diamond sear marks)

      So the internal temp of the smoker can get over 500 but when you pull the sear plate open the temp over that fire is 1000. Next time I go to sear something I’ll see what my temp gun reads.

      @@go-ham1594 I have not gotten a red cent from Pit Boss and paid full price for my Brunswick. Sorry to hear you were having issues with yours. I did do a pros and cons list after using it 6 months after use. One thing that surprised me is one of the cons I said was how hard it was to pull out the ash clean out tray and the Pit Boss R&D team went back and redesigned it. That showed me this company listens and wants to offer a great smoker at a great price.
