Right! I just made my first Almond Keto bread yesterday and the flour was much expensive! Plus, I didn't like the taste. I'm looking forward to trying this one.

Yes it is. I bought my first bag today, it was half the price of almond flour. No thanks lol...Gonna make this today to go with my pot roast.

It's even cheaper if you make your own. It's a by-product of making coconut milk and it's so easy!

quarter the cost here. half pound bag of almond flour costs me twice as much as a full pound of coconut flour from the same brand.

Healthier as well as almonds contains the most of oxalates!!!

I have been DYING for an easy, gluten-free (no wheat, etc), low-oxalate (no almond flour), low-fiber (no psyillium husks), keto (dear lawd) bread recipe. I really didn't have any hope at all. Well, I just made it and THIS IS MY HOLY GRAIL.
I added 1 tsp of yeast to give it a yeasty flavor in the background, added a little more salt, and didn't put in any of the herbs. (Wanted to try it as a base recipe, first)
It's SO easy and SO good!
It's not quite as crumbly as cornbread, but the texture is pretty close. There isn't a HINT of coconut flavor. Very neutral.
This is exactly what I was praying for.
THANK YOU GUYS!! Trying to make such a limited diet sustainable is so tricky.
This recipe will work for my friend with kidney disease, my friend with T2 diabetes, my daughter's allergies and pancreatitis, my husband's keto diet, AND my... all of the above issues plus some.

@Mike Spencer CHIA SEEDS KITCHEN TIPS
[RECIPE] CHIA SEEDS GEL AS EGG SUBSTITUTE IN BAKING
Chia Seeds Gel as Egg Substitute | www.fussfreecooking.com
I have a slight obsession with banana loaf. If you ask my beloved, maybe “slight” is an understatement ha! I have several banana loaf recipes on my blog and I have just featured a vegan and dairy friendly version two weeks ago.
When it comes to baking, one of the frequently asked questions I received was what I would do to substitute egg.
Instead of commercial egg replacement such as xanthan gum, I thought I would go for something that I am more familiar with such as chia seeds which I have learned from a friend that you can use chia seeds gel as a binding agent in a baking recipe.
To replace an egg, I used 1 tablespoon of chia seeds mixed with 3 tablespoons of water and let the mixture sit for 15 to 20 minutes or you can prepare it the night before.
      Copied!!

Have you considered baking this in a muffin top pan? It makes nice size bread rounds for sandwhiches and it tends to get crusty on the top and bottom. I do this with a flax bread recipe I have and just keep the rounds in the freezer until I need them.

If you want taller bread, cut the loaf in half so that each half is the size of a slice of bread. Then, slice the bread horizontally instead of vertically. (Actually, you would still be cuttimg it verrically, just tilt each halIf of the loaf and cut it vertically) If you are going to toast your bread anyway, thin slices will hold up for use with sandwiches. Mine just came out of the oven. I cut it while it was still hot so it's not that stiff yet. Hope this helps. Thanks for the recipe!

I just made this with olive oil instead of butter, divided up the mixture and baked them in silicone muffin cups for around 25-30 minutes. They came out like scones! Sooooo yum! I didn't put the rosemary or garlic powder (because I didn't have them), but did put the onion powder, and I think it added a slight sweetness (but there was no oniony flavour). Now I have a great 'scone' recipe too :D Thank you!

  • @YellaYella831

Just made this and I'm so mad I have to share this with my family. It is soooooo good!!! No eggy taste at all.
I thought I had a loaf pan but was wrong. Used a square man 9x9 I think. Cut the coming time to 30 mins.
Not a big rosemary person, used Italian seasoning instead. Best decision!
No garlic powder subbed granulated garlic. Couldn't tell a difference. Would go more with garlic.
Can't wait to play around with this recipe with sweet add ins.
    Would recommend using parchment paper.

I tried the recipe, it tasted pretty good, I put it on cookie sheets for about 27 minutes (I would recommend probably less time than that.) It worked but was still to thick, so I cut those in half, that seemed to work pretty well. 😊

If you want a taller loaf just multiply recipe by 1.25 or 1.5. Let it cool before removing from loaf pan to prevent it from breaking...

    • @KetoConnect
      @KetoConnect  7 ปีที่แล้ว +3

It really doesn't rise at all because of the coconut flour, but if you beat the eggs it might have slightly more volume and be more "airy". Also more crumbly though.

I popped my keto baking cherry tonight by making this bread. When you mentioned it did not rise much, I immediately thought of cornbread. I am a southern girl who misses that treat. Sidenote, made your keto chili with this soy beans black beans on Friday night, and they are divine! Anyway, I added more Southwest seasonings to the batter and popped it into the oven for 5 0minutes. Waited 20 minutes to Diggin, and the perfect tasting keto cornbread it was delectable against my tongue! Thank you! It will go fabulously with the rest of my chili.

I made this and, to be honest, it didn't really look or taste like bread, but I did change the recipe a bit. It was more of a salty cake-type sponge or something like that. It was very moist/fatty and delicious, though. I replaced the rosemary for thyme and put a smaller amount of it into the recipe. I had no garlic or onion powder and put toasted garlic into the recipe and it worked out great! I also added about 10g powdered flax/chia and water into the recipe. Lots of changes LOL but sometimes recipes serve more as inspiration, when you don't have all of the ingredients.

U can get sandwivh sized pieces from that loaf by slicing in half the eay it broke for Mega (cut on the short side) so u have 2 almost- cubes. Then slice on the horizontal, knife parallel to the cutting board.
I'll try making it in a larger pan 9×13, baking sheet w edges or 8x8 will bake faster, Less slicing to do and, it'll have more crust for people who like crust. Thanks so much, guys!

google stick to gm or cup to gm for each item.

You can look up conversions for grams. 1/4 teaspoon is 1 gram. There are 3 teaspoons in one tablespoon, and that is 1/2 ounce. There are 8 ounces in 1 cup. A quart is 32 ounces, and a gallon is 64 ounces. That should give you the general information. Sorry, the USA hasn't converted to metrics. Usually for flour type products, humidity can affect the weight and properties, so you may have to adjust for that.

Question...Would adding a 1/2 cup ground flax seed flour(add omegas) and 1 teaspoon of yeast and allow to rise make it "bigger!
Minced onion and/or garlic might make for a "fab" recipe !
After slicing and to get "The crunch"...Do you think spraying with olive oil and baking the slices would make it "Crunchy ?

Yeast needs sugar to get happy and multiply... So I don't know if monk fruit sweetener would work? I'm putting a little yeast in anyway to get that bread taste.

Also, brushing the top with a little egg and water mixture makes a nice shiny, crunchy crust.

G'day Keto Connect, I made a lovely sweet bread using your recipe and I added almond essence and some Natvia, absolutely awesome ,I'm cooking another right now and I'm doing the rosemary one today and another almond bread . I'm looking forward to make many more by changing the flavouring to suit my taste from time to time. I also line my tin with baking paper so the bread doe not stick , it still comes out golden brown on the bottom 😀.

Does this come out tasting pretty egg-y? I made cloud bread and really didn't like it, it tasted like baked eggs! I'm desperate for a good low carb bread alternative but don't like wasting my ingredients if they're a miss!

Tried these like right now. But instead of baking in a loaf pan I baked it in a muffin tin. Just split the batter into 10. And they look and taste amazing.

This is such a great alternative. My 6yo is transitioning to this woe but obviously a higher carb and calorie count so he can gain weight but get all of the great neurological benefits. His school is nut free so finding items that dont have almonds and what not is hard. I'm making this right now and I'm so excited to send him this in his school lunch!

I wonder if I'd get a taller loaf by beating the egg whites first to a sponge consistency, then add the egg yolks one by one then to this mix add the dry ingredients, just as if you were making a pound cake...I have to try and see what happens. Thank you for experimenting and sharing the final results 👍🏼👏🏼👏🏼

Try mixing almond & coconut flour. Also try Carbalose, I don't have any financial connection, but I like their products. Another thing to try is mixing in roasted garlic, garlic powder and parmesan cheese, then add a bit of Italian seasoning for variety.

Finely a coconut flour bread. Almond flour is so darn expensive so happy to have a cost friendly loaf of bread. Will definitely give this a go. Going to experiment with putting it in a bread mold and microwaving the dough as a 90 second bread.

Hi there Matt and Meghan! I am attempting to slowly transition into Keto... I bought a few keto friendly items but living in Dubai its quite the struggle, stuff like haloumi cheese is cheap here vs being quite expensive there, and stuff like berries are expensive here... Anyway just want to give u guys a huge shout out and thanks for the lovely videos!! I just tried the coconut bread and I'm in love especially as I am kenyan and we do love coconut!! Can't wait to try out more of the recipes!

I tried this recipe with fresh garlic fried in butter as you said and it did came out really good. I do agree this ones better than the almond bread and way easy to make. Can you also make a sweet version of it, with vanilla, nutmeg cinnamon for the sweetness. Thanks
