    This is by far the best souffle pancake recipe ever! The sweetness is just perfect, the cooking time is just about right and i just love how the video explains every single details so that the pancakes are able to cook perfectly! God knows how many times i failed doing souffle pancakes, its either always not in shape (meringue not stiff enough) or it got burnt (high heat or long cooking time) anyway, gotta do more of these in the future following this recipe! Thank you!

      Lisa Lisa it made 5 smallish pancakes for me. I will definitely do a double batch the next time I make them! I think my meringue wasn't quite done enough and it would've made more but it definitely didn't make a lot. hope this helps!

    My wife and I just made a triple batch of these and they came out awesome! One thing we learned, put the batter bowl into an ice bath. Sitting out while cooking the pancakes makes the meringue start to break down.

    I just made this. My merange failed so it looked like a normal pancake but my god! It tasted so fluffy and good!!! Better then the pancakes I pay $20 for in the cafe! I love this recipe!

      Make sure your egg whites are at room temperature before whipping them. Cold eggs don’t come together well for meringue

    These aren't regular pancakes. They are like Birthday pancakes, Aniversary pancakes or Christmas morning pancakes. Maybe they are not pancakes, but fluffy soft clouds of amazing goodness. Sooo good!! I eat them extra slow to enjoy them. Your going to have to double the batch or make more. They will go fast.

    I'm a cooking amateur dad (my only other thing I'm proud of is my scones, which I have a video for), and the level of detail here was SO helpful. My first attempt was pretty successful and delicious, but not as thick, which I'm pretty sure was because my batter was not quite stiff enough. I also think I cooked mine a bit too long, because they were not as gooey in the center.
    These are PERFECT for special occasions, like Mother's Day breakfast. I encourage people to try it out!

      I don't understand "overdo the batter". Do you mean don't mix it too much after I fold in the meringue? That's possible, but my batter was NOT very sticky before I added the meringue, I think because there wasn't enough flour, so maybe it didn't hold shape well.

    Thank you so much for this recipe. It became my 2yr old nephew's first pancake and he loves to talk about "fluffy pancakes." His favorite thing is to watch me make them. We decided to use these for a breakfast-for-dinner along side pork chops, bacon (because my nephew refuses pork chops), and topped it all with peach compote, which is in season now. It turned out amazing! My mother has already insisted that our next breakfast-for-dinner night should feature these pancakes again. Thank you so much for this easy to use video!

    I tried this tonight for the first time. After reading other comments I expected to do this wrong the first time, but they turned out good! They looked just like the ones in the video. I couldn't believe how light and fluffy they were. So different than a regular pancake, which I love, too. They are just different. And of course it's easier to mess up this recipe if you aren't careful. It's next to impossible to mess up regular pancakes! I think one of the main tricks here is to find the perfect temperature to cook them. I did mine in a pan on the stove at a temp setting of "4" (5 is the very middle setting on my stove) and that turned out perfect.

    In Vienna we add raisins tear it into pieces and serve this with steamed seasoned plums. It is called Kaiserschmarrn. Evervybody loves it. Will try the Japanese version

      Amount is for about 3 persons. I made for two persons, 10 small ones. Maybe double the recipe if you want more. I made a small batch cos it was first time I made this, next time I 'll make more! Definetly! They taste so yummieeee.

    Guys, seriously. These pancakes are so unbelievably good. I just made them for my children for breakfast, and my little ones loved them so much. This is going to be our special breakfast treat for special days, and it's so worth every minute you spend weighing, whipping, waiting.

    Here, in the central German countryside, we traditionally eat pancakes without syrup or anything else, maybe just a little dusting of powdered sugar (we put less sugar into the batter, then), or a little dollop of whipped cream; we enjoy them as a treat on their own. So I served these without anything else, and I really can't imagine to drown them in syrup. I will just serve some fresh berries with them next time, because I think that the texture, coolness and slight acidity is a great contrast to those fluffy, warm, sweet cloud cakes.

    I have a serious problem with this recipe!
    I tripled the ingredients because I was making breakfast for my family. They were so delicious I ended up eating 7 pancakes while I cooked them, my family got one each.
    I had to cook a second haha.

    This was surprisingly very easy and quick to make. I followed your instructions and everything came out perfectly. Earlier in the day i also did your homemade honey butter and jam butter. First time I ever made butter! I made the pancakes and butter for my picky toddler and he loved them!

    These were surprisingly easy to make, when I followed your instructions exactly. Thank you for the tip on folding the eggwhites into the batter. Its so much easier than the method I've been using up until now.

      You got it right! Using a whisk to combine meringue and batter is prohibited in an old school method. Removing a bias helped me a lot.

    I tried this and it was amazing! Excellent recipe and an excellent video, thank you 💜 a few points for others: I tried this 4 times before getting it just right, I could tell her recipe was perfect but my technique was not. For my final and most successful batch I used a stovetop non stick pan and had my gas burner just over the lowest setting. I also used a bit more oil than shown. Next I made 4 smaller pancakes to allow more even cooking. These are gonna be the softest things you've ever had in your life cooked, so if you flip them when they're aren't cooked through a bit they will disintegrate away from your spatula like my first one did 💔 anyways, I covered them for 15 minutes. To flip, I picked one up set it aside still on the spatula, swiped the area of the pan with more oil to regrease and pick up residue from the first side then flipped the pancake back into the pan, repeat with the others. Cover again for another 5 minutes. Lastly, these ARE SOO SOFT so spreading firm butter on it is a no go. I melted a bit in the pan and swirled the pancake around in it instead. Served them with strawberries, powdered sugar, and maple syrup to my fiance and he gave them a 10 out of 10 without hesitation 🤗🤗🤗🤗🤗🤗🤗

    These were amazing. Much better than regular pancakes. So light and airy. Your directions were great too. I don't own a griddle, but now I have to get one. I used my cast iron pan. I think it needs to steam w a lid, so it helps cook the center. I didnt use one. No wonder there are long lines waiting for these pancakes.

    I can't get them to be fluffy. I am sure it has to do with the meringue. Despite the fact that mine are sad flat pancakes, they taste great. I am going to keep working on this until they fluff up. Thank you for sharing your great recipes!!

      I did my second attempt today and failed lol. I think the mixing is the most important/difficult part. Don't wanna lose the air that's inside the meringue. Also it's important to make sure it cooks thoroughly because of it's height. GOOD LUCK KEEP GOING :)

      Mines came out flat too. But it tasted good. I think I will fold instead of using the whisk to mix the meringue and yolk mixture. The whisk most likely caused it to over mix.

    Dont have a griddle yet but I did them in a nonstick skillet came out delicious! Just didnt have that even gorgeous browning on the top. Great recipe !

    Just made these for the first time after seeing this video a couple of weeks ago. Even bought a new griddle to celebrate the occasion! Pro tip: dont use your griddle for the first time while making these! Hahahah! Mistakes were made with temperature, griddle didnt come with a cover, etc. Learning experience all around!     Also a tip to get stiff peaks, try using room temperature eggs and make sure not even a drop of yolk is in it. I learn this was the secret to success for a fluffy pancake. This recipe is great btw! Thanks again!

      issac82983 I used 2 oz cream cheese, 2 eggs and used her technique with separating the egg yolks and egg whites. So instead of the flour I used 1 tsp of baking powder with the yolks along with the cream cheese, then did the meringue with whites and used a packet of splenda. Then folded it according to her technique. Using the lid is important too, when cooking in medium heat. Hope that helps and sorry I don't do videos.
