A good, sensible loadout for sure. But I'm going to have a lot better chance of going a long distance, maybe up to 150 km, with a much lighter pack.
For food, 1 can of spam/day plus a protein bar -- 5.5 lb for 7 days. Water carry in titanium bottles of about 2.5L, plus tabs and a Sawyer squeeze. Alcohol stove with windscreen, pot, firestarters, and fuel.
The OneWind tent or a bivy for shelter. A good inflatable pad, always. A decent quilt or bag -- or even an insulated anorak over dry clothing if conditions warrant and speed is critical. Fishnet baselayers are tremendous in all seasons, and rain pants are sometimes a necessity. Headwear, gloves, etc as desired.
Other gear like flashlights, themal monocular, navigation tools, etc when it is mission critical.
For carrying the smaller/heavier items and water, a Savotta Askare 7L hip pack with some adaptation will keep much of the weight off of the shoulders at all times. Over that a small bag, maybe as low as a 30L vest harness job, will accommodate bulkier gear. Plus, if they're well matched, you can easily transfer the upper load at any time onto the "shelf" supplied by the top of the hip bag!

Re the back panel... going to do a video on it but I think I finally cracked the code and have got old school Alice frame fitting over a slimline pack on a chest rig/plate carrier by adding some magazine wings at the top of carrier and some tshirt/socks/foam to just separate the top a little more
Felt nice up and down my street but haven't had time to go for a hike with it under load; as it fits in the gap.

I just got some army field packs from sportsmans guide for less than $50 each. Way more comfortable than the large alice

I know this is a month late but - jolly ranchers especially the twin flavor ones are fucking money on a 20km movement.

Utensils at least for me are a minimum concern because (at least where I am) there are trees and you can take a couple of sticks and strip the bark and you have clean enough and good enough chop sticks which will cover almost anything you need to do with eating utensils
