When my wife and I pedal our 🚲 🚲 around the Shikoku Circuit ride, I want to enjoy this breakfast whenever it's available. If you gave me the PERFECT kitchen shown in the video and all the ingredients, I think that I could make this breakfast after about 40 hours of trial and error. I love mackerel, and this looks AWESOME!
My Japanese American girlfriend's Dad introduced me to Mackerel while we were on a trip to Hawaii. We went to a Japanese restaurant on Mauii and ordered Bento Boxes. He got the one with Makerel as the main. When our meals were served I asked him what Mackerel was like and he offered me to try some. It was grilled on a habachi, and it was oily but in a good way. I found the flavor to be strong but pleasant. I will always remember that trip with them. I have such fond memories of Hawaii, the tome together and the food we shared.
Japanese breakfest is the best! Even in a lot of good budged hotels you get these things at the morning buffet. I loved it and I miss it very much. Greetings from Germany.

Mackarel is a fish with plenty of oils and dark meat which gives its natural robust fishy taste. Although it is difficult to completely remove the taste, there are methods I am familiar with which reduce the strong flavours of the fish. 1) Removal of the guts as soon as possible to prevent the transfer of taste onto the flesh. 2) Gently washing the filets in sake for a minute or two also works very well. Just make sure to pat the filets dry before the salting process. 🙂 I am truly sorry for your dad's loss. For your family, it must mean much more than just food. I cannot do much asides from cooking, but if there is any way I can be of any help, please let me know. You are welcome to share this video and thank you very much for sharing your story with me.
@@Walk-InFridge my fathers loss goes back to when he was 12 years old, when his Japanese friend, and his family, were put on a Canadian military bus and sent to a Japanese internment camp. Dad was 12 when this happened and 78+ years later it still has a profound effect on him. 🙏🏻✌🏻

Mackerel is one of my favorite tastes - but here in the USA's South East, one can't find good fresh mackerel except if I drive two and a half hours to the coast. The fresh fish markets never have it, and flash frozen is also near impossible to find. My favorite way to have it is not cooked but brined the way Russians do it. If I tried cooking as this gentleman does - the breakfast would be ready at near dinner time. What a show of skill and the approach to the food seems to be full of some sort of deep reverence. Wonderful to see.
The radish pickles can be made in advance, they store well for a week or so and therefore an hour isn’t needed daily. Also, make fresh dashi by placing the kombu seaweed in the pot overnight, in the morning I simply heat the pot to near boiling then remove it. Then add the bonito flakes as done here. It only takes a few minutes (don’t over steep the bonito-once it settles in the pot the broth should be strained. Lastly, many instant dashi products are available. I’m not fond of the instant powder but find the sachets (like tea bags) fairly good. Dashi is best fresh & used immediately but I eat miso soup daily with breakfast and prefer homemade to the sachets and make enough dashi for several days. Stored tightly & kept in the fridge it looses something each day but I still find it superior to any of the instant products.

in morocco, 1 minuts for cup of tea, 1 minute for 2 eggs + olive oil + chase+butter, some black coffee at the end! every thing in less than 10 mintes, i just can"t spend more time!
I love Japanese breakfasts! I had it every morning on vacation at the Tokyu Hotel in Kyoto and they were amazing - so many little dishes, fish, soup, rice served in several incarnations, and vegetable/tofu dishes prepared in so many ingenious ways and with so much effort! when it was brought to me on a large tray it was like receiving a piece of artwork -- I could never do it at home and so it's just another reason to go back to Japan. BTW the depachika food sellers in all the major department store basements are my idea of dying and going to heaven...
how much time for this breakfast. you should be rich, otherwise I dont think a normal employee has that time to prepare and enjoy such a good meal before running to the metro
I am German born in USA and was trying to find videos on asian cuisine because I am hopeful that eventually I could open a Chinese owned group home for people in the United States who enjoys asian culture like me and my friends I hope someday I could make my dream a reality for asian cultural lover's I do love sushi and crab Rangoon it's my favorite 😅
@bonny464 i understand I just wanted to start a company that helps people but I am sorry if my comments seem false or incorrect but yes there's many cultures out there and there for the reasons why I said that is because I live in a group home in the United States and I wish to open a great group home business some where in China it's important to mention that many people have disabilities like autism like me who need assistance and I was raised to believe in asian cultures in a positive manner as they make a difference in our world and communities
