    When I cook fried rice my mother hates it if I put the soy sauce on when it's cooking because she says it looks dirty. I've been doing the thing where you put the sauce on the cold rice and leave it and it's sooo much cleaner looking and she'll eat it again. Game changer.
    Wow - never seen sugar used. Going to give this a whirl in the next few days. Cheers.

    I cooked this egg fried rice for my kids and their Thai friend whose Dad owns "The Meeting" Enfield Town.
    They absolutely loved it and their friend said "its the best egg fried rice Ive ever had. Im going to tell my Dad"

    Putting the soy sauce in the cold rice before frying it is brilliant.
    I even wonder if you couldn't go a step further and actually put the soy in the water when you cook the rice.

    Thanks, I rotate Egg Fried Rice & a noodle Stir fry for lunch each day and been looking a different cooking methods to try a prefect them. Is it okay to cook with Stir fry oil? 89% Veg oil & 11% Sesame Oil? Just bought the Chicken powder the store didn't have any msg though, was sold out, I'll get that soon. Funny enough months back I tried all the Soy sauces and didn't rate the Lee kum kee, but I got it again and it's better now I don't put it in with the veg before the rice old method I seen and used. Still trying to find a noodle that I can use dry weight before cooking for the stir fry. just tried spaghetti with baking powder not great. Tried Tesco Egg noodles before was using Amoy medium noodles before that.

      Sesame oil is use as a garnish but other than that 👍 also lee kum Kee from a Chinese supermarket taste different from if you buy it in tesco, they have different ingredients

      Thank you, I just picked up some Lee Kum Kee Black Bean Garlic Sauce from a Chinese store to try. I only asked about the oil as it's 89% Veg and only 11% Sesame oil, Normally just use Avocado Oil for everything.@@ZiangsFoodWorkshop

      Lkk premium lights and dark or Amoy 1st extract light and dark are the only soys we’ve recommended:)

    I've always used the Knorr chicken stock with fried rice, for me it just always made sense otherwise your rice doesn't have any base flavour

    What is the "seasoned oil" do we mix it up ourselves or can we buy it ready made?
    I usually use sesame oil 🤦‍♀️🤦‍♀️ but it overpowers everything.

    I heard from one place on the internet that to truly have a restaurant style egg fried rice, you should use Shaoxing Rice Wine on the rice when frying - Your thoughts on this?

      I mean it’s subjective but for a main dish yes, for a side of fried rice like this, maybe not, as the flavour will almost be lost by the main dish that will sit on top of it, unless that dish is heavily used Chinese rice wine then it won’t be lost :)

    I can never do egg dried rice. I always mess up as the rice never seems to fry. The induction is on 2.5Kw but I think the wok is crap or maybe my overnight rice is to wet

    I cooked my own yesterday, major fail (still eaten it though) I put to much soy in it and made it wet then when I cooked it to dry it up the dark soy burnt

    Sesame oil also feeds the healthy probiotics on skin. If you remove all your probiotics - expect to have health problems.

    Are peas a ‘traditional’ addition to egg fried rice at all? I love the sweet pop of peas in my rice but not sure if that’s because I’m just used to it from our Chinese takeaways over the years!
    Also agree with other commenters that I’d happily have this egg fried rice as my main dish (granted with some kind of sauce). Happy cooking guys!

      I don't know about traditional but I love peas with mine. As you say, the sweet pop of the peas adds something to the dish. 🙂

    Oh Chin, I'd love to see you challenge Uncle Roger as I know you would win hands down. On another note, do you have a list of basic equipment we can buy to start wok cooking, I'm stuck with a shit electric hob and an old tefal flat bottomed (not fattomed girl) wok, and I have no gas supply. Stuck out in the Wild Noth West of Wales.

    Fried rice mixed with scrambled egg, is it a regional differance ? It is not the style had in hong kong, singapore or even the way my preffered local chinese take away here in the uk makes it. The style i am use to the rice is fried then raw egg is poured over the reheated rice and stir fried till the the egg coating the rice cooked and seperated. Ken Hom - Egg Fried Rice th-cam.com/video/Dox3J3EWyOI/w-d-xo.html is the style i am reffering to. Thanks for the tips especially the knorr chicken powder, seasoned oil i'll add those to Mr Hom's style when i make my own. Take care, stay safe, God bless one and all.

    The place I worked, he did it all in one wok, no stock powder, just salt, sugar and msg, as far as I know, it was 3 white powders and that's what I assumed they would be. Also, there were no spring onions. And, it's just fried rice, dunno where this need to add "egg" into the name came from.

      This is one version, and not our 1st fried rice video, our 1st ever video is how most places do it as is essentially what you just described, I’ve worked in about 6 takeaways and owned 3 now, mum has way more experience and I’m 5th generation chinese chef 👨‍🍳 😊😊😊
