I think it's just the pianist's choice. Mr. Giltburg certainly knows these sonatas deeply, and chose to use the score in front of him as a guide, a support. With new technologies, IPads, bluetooth page turners, I think this will become more and more common. I see that harpsichordists and organists are more receptive about playing with the support of the sheet music, but this is still a taboo for many pianists, when it shouldn't be: whether the music is, with sheet music or from memory, it doesn't matter!
